Hello ladies. I have a few ridiculously easy crockpot recipes for you today. I can’t say enough how much I love my crockpot. There is nothing like coming home from a busy day to the delicious smells coming from your slow cooker. (or enjoying the smell all day long as you play with your kids and go about your housework!) I love taking a small amount of time in the morning to get dinner in the pot, and then not having to worry about it the rest of the day!

Italian Chicken

Ingredients: Frozen chicken breasts or tenders (enough to feed your family) You could also use dark meat for these recipes, but my family prefers the breasts.

Baby carrots

Quartered potatoes (any color will do)

1/2 – 3/4 bottle of Italian dressing

This recipe does not get any easier! Place your frozen chicken and vegetables into your crockpot, and top with the Italian dressing. (I’ve also used a Roasted Red Pepper dressing, and really loved it!)

Cook on low for 4-6 hours. Your chicken will fall apart, and your vegetables will be packed with flavor!

 

Chicken Tacos

Ingredients: Frozen chicken breasts

1 can of diced tomatoes with chiles

1 envelope of taco seasoning mix

Put your chicken in your crockpot. Mix together the tomatoes and seasoning and pour mixture on top of chicken. Cook on low for 4-6 hours. With a fork, shred your cooked chicken. Fill your favorite tortillas with the chicken and a variety of taco toppings. This is SO easy, and a nice change from traditional taco meat. The chicken is super juicy and tender!

 

BBQ Chicken Sandwiches

Ingredients:

Frozen Chicken breasts

A bottle of your favorite bbq sauce

1/4 to 1/2 cup of brown sugar

2 T apple cider vinegar (not necessary, but gives a really nice tang!)

2 T mustard

Mix together the wet ingredients and brown sugar, and pour over the chicken. Cook on low for around 6 hours. This will not only make your house smell fabulous (we’re talking salivation-inducing good!), but will make the BEST shredded chicken for bbq sandwiches ever! Simply shred your chicken and spoon it up onto your favorite rolls.

Enjoy these three SUPER easy and no-stress meals that your whole family will enjoy! (And you just might enjoy your dinner as well, since you didn’t have to frantically prepare it! Happy crockpotting!
