Got Frozen Chicken and a Crockpot??

Hello ladies. I have a few ridiculously easy crockpot recipes for you today. I can’t say enough how much I love my crockpot. There is nothing like coming home from a busy day to the delicious smells coming from your slow cooker. (or enjoying the smell all day long as you play with your kids and go about your housework!) I love taking a small amount of time in the morning to get dinner in the pot, and then not having to worry about it the rest of the day!

Italian Chicken

Ingredients: Frozen chicken breasts or tenders (enough to feed your family) You could also use dark meat for these recipes, but my family prefers the breasts.

Baby carrots

Quartered potatoes (any color will do)

1/2 – 3/4 bottle of Italian dressing

This recipe does not get any easier! Place your frozen chicken and vegetables into your crockpot, and top with the Italian dressing. (I’ve also used a Roasted Red Pepper dressing, and really loved it!)

Cook on low for 4-6 hours. Your chicken will fall apart, and your vegetables will be packed with flavor!


Chicken Tacos

Ingredients: Frozen chicken breasts

1 can of diced tomatoes with chiles

1 envelope of taco seasoning mix

Put your chicken in your crockpot. Mix together the tomatoes and seasoning and pour mixture on top of chicken. Cook on low for 4-6 hours. With a fork, shred your cooked chicken. Fill your favorite tortillas with the chicken and a variety of taco toppings. This is SO easy, and a nice change from traditional taco meat. The chicken is super juicy and tender!


BBQ Chicken Sandwiches


Frozen Chicken breasts

A bottle of your favorite bbq sauce

1/4 to 1/2 cup of brown sugar

2 T apple cider vinegar (not necessary, but gives a really nice tang!)

2 T mustard

Mix together the wet ingredients and brown sugar, and pour over the chicken. Cook on low for around 6 hours. This will not only make your house smell fabulous (we’re talking salivation-inducing good!), but will make the BEST shredded chicken for bbq sandwiches ever! Simply shred your chicken and spoon it up onto your favorite rolls.

Enjoy these three SUPER easy and no-stress meals that your whole family will enjoy! (And you just might enjoy your dinner as well, since you didn’t have to frantically prepare it! Happy crockpotting!

    • I was looking for something quick and easy since tonight’s a busy night and lo and behold I found this frozen chicken recipe! I tend to wait until the last minute so I’m looking forward to seeing how it tastes tonight. And I didn’t have Italian dressing in my house but I found a quick and easy recipe to whip that up too!

  5. Bekki, I was searching for a recipe that uses frozen chicken and BBQ sauce and, happily, stumbled onto yours! I just mixed up those wet ingredients and sampled it … yes, the best BBQ sauce I’ve ever had! I used a bottle of K.C. Masterpiece Original, if anyone wants to know. It’s all cooking in the crock pot now, and hubby and I are anxiously awaiting when 6:30PM rolls around so we can feast on it! 🙂 I am going to serve this with some brown rice and a seasoned veggie, instead of as a sandwich … I’m sure it will be just a tasty!!   6. Recipes sound great! But I heard putting frozen chicken in crockpot makes the chicken unsafe because of the slow/low cooking temps; FDA recommends thawing frozen chicken first before placing in crockpot…your thoughts?

    • We’ve been doing it for years and never had a problem. Certainly if you are concerned, you could definitely make any of these with thawed chicken.

  7. I’m breaking in a new crock pot (cross your fingers), with your chicken taco recipe. I’m just a little worried that I don’t have enough liquid. It’s a 6.5 qt crock with about 2.5 lbs. of chicken and only the juice from one can of Rotel. Should I add more liquid? If so, should I add more taco seasoning?

    • If the chicken is frozen, I think you’re okay. If you are worried, I’d add salsa or just another 1/4 cup water, and yes, I’d bump up the taco seasoning just a bit. Hope it works for you!

      • I made this the other night and threw in a few strips of red, green, and yellow peppers for me and my family loved it, we ate it 2 nights in a row as tacos and fajitas

  8. This is amazing!!!! I made this for the first time a few months ago, and it’s pretty much been my dinner every Friday night- a treat I look forward to greatly!!! My favorite is to put it over rice. I make about two cups of rice with this recipe, and that always seems to be about perfect. I also loved it in tacos and over pasta, and I served it to friends one night with chips! EVERYONE is a fan with this- you can’t go wrong! And sooo easy!!!! I always use refrigerated chicken breasts, about 2-2.5 lbs (five of them).

  9. Do I need to adjust time if I Don’t use the veggies?
    Or if I use a bag of frozen veggies?
    I have to layer the chicken as my crockpot is small and we need to feed 6.

    • I have found that I can typically cook my chicken (even frozen chicken breasts) in as little as 3 hours in the crockpot. If they are layered, I still think they would cook in 4-6, perhaps checking once and “swapping” the top for the bottom if necessary. =)

  10. Hi- I have chicken tenders. How much do I use for the barbecue recipe?

    • I would do about a half a pound of tenders per person (or 2-3 tenders per person.) You’ll have plenty of sauce for about 3 lbs. worth.

      • Thanks. I tried the buffalo tender recipe and I think I let it cook too long- 6 hours on low. They were very dry.

  11. I love these recipes! Although I am worried that last time I did frozen chicken in my crock pot it left behind white debris – like fluffy chicken stuff? Sometimes it builds up on the chicken I do in the oven too. Does anybody else have this problem ? Or am I just weird?

    • That happens to me sometimes too. I actually googled what that “stuff” was the other day. Pretty sure it’s harmless – just not pretty.
