Are you ready to have me blow your mind with a SUPER quick and tasty crockpot recipe? This recipe is so easy, my five year old literally put this together all by herself today (*aside from the chopping.) This is an awesome meal to throw in the crockpot in the morning before work or church, and then come home to a wonderful smelling home, and a delicious and healthy meal! This recipe is so fast to prepare, you can literally make dinner in five minutes….there is almost no prep work involved! Ready for this one ladies? It is a favorite at the Chasing Supermom house! (and easy to modify too!)

Here is what you will need:

Frozen chicken breasts (enough for your family)

1/2-3/4 bottle of your favorite Italian dressing (*I like to use Zesty, or Roasted Red Pepper)

baby carrots, halved

*I think chopped summer squash and/or zucchini would make an excellent additional seasonal veggie in this meal! Other great add-ins would be diced onions or bell peppers

To Prepare:

Place frozen chicken breasts (you can certainly use fresh or thawed if you have that on hand!) in the bottom of your crockpot. Cover with chopped veggies and Italian dressing. Cook on medium heat for about 6 hours. We serve this meal over rice, but it is also great over mashed potatoes.

This meal is very easy to modify to your family’s liking. Use the veggies that YOU like, and the dressing you like the best, or the one that you have on hand! The chicken is moist and flavorful (my husband thinks it ends up tasting like turkey), and the dressing gives the meat and veggies a nice little tangy kick. Enjoy!!
