As some of you know, I LOVE cookies! There are some around my husband’s office that know me for my cookies, and I take just about every chance I have to bake. I also love to play around in the kitchen and make up new recipes. Yesterday, for my mom’s birthday, I came up with quite possibly the world’s EASIEST cookie (that was super delicious too!)

My mom LOVES cherry chip cake. Last year, I made her cherry chip cakeballs. This year, I wanted to see if I could turn her favorite cake mix into a soft and chewy cookie…and I did!

Are you ready for a soft and tasty cookie with get this…3 ingredients??!!! You will LOVE these cherry chip cookies!

1 cherry chip cake mix

1/2 cup vegetable oil

2 eggs

(Seriously, that is all you need! Told ya these were easy!)

To Prepare

1. Preheat your oven to 350 degrees.

2. Mix together the cake mix, oil,and eggs until well incorporated.

3. Drop by rounded spoonfuls (I always use my Pampered Chef cookie scoop) onto a cookie sheet.

4. Bake for 7-8 minutes. (Oven times and temperatures really can vary. I highly recommend watching your cookies closely! I always pull out my cookies when they are still slightly soft in the middle, and before the edges have gone brown. I let my cookies finish baking outside of the oven for a minute or two.)

If you like, you can top these with some cherry frosting. I sent my mom home with the can of frosting I bought, so we have been enjoying the rest without, and they are still scrumptious! These cute little cookies are great for Valentines, a pink birthday party, or any day! I hope you enjoy the world’s easiest cookies!!

  1. Where did you get the cherry chip cake mix? I have never seen anything like that before.

    • do you need to prepare the cake mix like it says on the box THEN add the eggs and vegetable oil…or dont follow the box recipe and JUST add the eggs and vegetable oil?

      • You just need to add the eggs and vegetable oil. So just dump the dry cake mix in, and then add the oil and eggs that are in my recipe. So easy, and so good! I hope you like them!!

  2. I’m going to add cherry chips. I finally located them so I bought two. Fareway stores carry them in the midwest.

    • While we always have the cake mix out here, I have NEVER seen cherry chips! How lucky are you!?

  3. P.S. I’m also considering adding red food coloring, just a tad. The cherry chip cookies I see in the store bakery look a little pinker.

    • Good idea! Who wouldn’t love pink cookies?!

  4. welcome to cherry chip cookie world…my mom has been making them since I was a kid and I am 48 now…I have been making them for my kids since they were young and I am still making them…they love them and so do all the kids that come over

  5. my mom has been making these since we were kids and I am 48 now…and because of how yummy they are I have been making them for my kids and they love them …I come home from work and when I see the cake mix box on the counter it means my son wants cookies . I make them no matter what the time….

  6. Had these at work the other day with chocolate chips added – they were the bomb and a real hit. Making some this weekend. Real easy recipe – great cookie.

    • So glad you liked them! I’m actually making them today too.

  7. Do you think you would make these with a lime cake mix to? Would be a good idea for Christimas.

    • I have made this recipe with a bunch of different cake mixes. I’m sure lime would be great – and yes, the red and green would be super cute for Christmas!

  8. My mom has been making these for me for over 40 years. She always adds maraschino cherries, drained and quartered. Best cookies ever!

  9. How many cookies does this recipe usually make? We are creating alliances in my history class and im using these as bribery to get my classmates to join our plan to take over russia.

    • I think it depends on the size of cookie scoop you use. It is a smaller batch though. I wouldn’t count on more than 18.

  10. Like Mary Jane – we’ve been making these for decades. Note that the same 2 added ingredients work for Red Velvet (with cream cheese frosting) or Lemon (just put a little bit of powdered sugar on top) cookies (Ok – probably all Super Moist Cake mixes). If your butter has softened, you may want to lower to 325 and cook a tad longer.
Good options if you cannot find Cherry Chip mix.
