I have a serious roll addiction. I’m that crazy person at restaurants that actually eats the rolls in the basket, even though I know they will spoil my appetite. I’m always on the look-out for great roll recipes to try out. This recipe is adapted from  Envy My Cooking.

While we don’t have Texas Roadhouse restaurants  here in the PNW, we have one of my all-time favorites…Billygan’s. These rolls taste a lot like the rolls you’d find at Billygan’s….soft, buttery, and delicious. These are easy to make too! Whip up some quick honey butter and serve these with dinner this week!

Here is what you’ll need to make these amazing little rolls!


2 1/2 t active dry yeast (*check your expiration!)

1/4 cup warm water

1 t. sugar

1 c. milk (microwaved for 2 minutes, and then left to cool to room temperature)

1/4 c. sugar

2 T melted butter

3-4 cups flour (I used all-purpose)

1 egg

1 t salt

1/2 stick (ish) butter or margarine


To Prepare

1. Dissolve the yeast in the warm water. Add 1 t. of sugar. Stir, and allow to foam up a bit.

2. Add in the milk, additional 1/4 c. sugar, and 1 1/2 cups flour. Gently mix (I used my Kitchen Aid mixer), until a light doughy batter forms. Allow to rest for about 5(ish) minutes. Just go check your email or browse through The Confessional Archives.

3. Add in the melted butter, egg, and salt. Mix well.

4. Stir in your flour until a soft dough forms.

5. Knead the dough until smooth and elastic. I use my Kitchen Aid mixer for kneading, but of course, you can use your hands! Once kneaded, place dough in a greased bowl, turning the dough once to coat it.

6. Cover and let rise in a warm place. The dough should about double in size.

7. When doubled, punch the dough down (this can be fun….given your current state of mind). Shape into rolls. You can either roll the dough into balls, or roll your dough out into a fat rectangle, and cut oblong rolls. You should yield 12 good sized rolls from this batch.

8. Let rise until doubled.

9. Bake in a 350 degree oven 10-12 minutes, until they are nice and golden brown.

10. AS SOON AS you take the rolls out of the oven, unwrap the top portion of a stick of butter or margarine. Run the butter along the top of each of the rolls. The butter will melt onto the hot rolls, and give them a nice buttery glaze. (It is SO good!)

11. Go ahead and try not to eat all of the rolls before serving them to your family and friends. I dare ya. Enjoy!!! Happy cooking!

  2. Thank you!! We used to go to Billygan’s regularly until they took our favorite dish off the menu, Parmesan crusted halibut! It was the best thing on their menu. I’ve managed to recreate it at home, but hadn’t done the rolls yet. I’m making the halibut tonight for Christmas dinner, and I’ll surprise my husband with the rolls too!
