I have pretty good self-control when it comes to candy. Chocolate is usually pretty safe around me.I do however, have a thing for baked goods. While my true dessert love is donuts, I’m sort of a sucker for a good cupcake too.
Cupcakes have become all the rage. With multiple tv shows dedicated to the sweet treat, and numerous cupcake boutiques popping up around the country, the adorably sized cakes are hard to resist. Cupcakes while cute, can also come with a calorie-count that isn’t quite as charming. If you like me, crave something sweet after dinner – a cupfake might be the thing for you.
I heard about Cupfakes from someone who used to do Weight Watchers. At first, (especially after hearing the recipe!) I was very skeptical. I thought I might as well pour the ingredients down my garbage disposal. I didn’t think the cupfakes could possibly turn out and/or taste good. I was proven wrong. (And this was one rare instance, where I was totally happy to be wrong!) These cupfakes are delicious – and taste just like a normal cupcake. You won’t miss the oil and eggs (or their high calorie count!)
Mix up a batch of these cupfakes this weekend and surprise your friends and family. I’ll bet they will never know you are serving them something so low-calorie! Depending on the size of the cupcake you make, and the boxed cake mix you choose, these cupfakes are typically 70-110 calories each. (Now that’s sweet!) Sorry – totally couldn’t help myself. 1 box cake mix (JUST the mix! Do NOT add the water, oil, or eggs!!!)
1 can diet soda
I told you you’d be skeptical!
I have made these with a variety of cake mix flavors and sodas. It works best to use a light colored soda with a white or yellow mix, and a darker soda for a chocolate mix.
Flavor Combos I Enjoy:
* Lemon cake mix Diet Sprite or Diet Mt. Dew
*White cake mix with Diet Orange or Diet Sprite
*Chocolate with Diet Cherry Coke
**I am keenly aware of the feelings many have towards diet soda. If diet soda is not for you, simply don’t make these.
1. Preheat your oven to 350 degrees. Prepare your muffin pans by spraying them with non-stick cooking spray or using muffin papers.
3. Pour the batter into the prepared muffin pans and bake for approximately 15 minutes (or as directed on the box.)
These cupfakes are surprisingly good and so simple to make. (They are also great when you don’t have eggs on hand, but want a treat!) Have fun getting into the kitchen and trying something new!
