When I was growing up, I’d request yellow cake with a double batch of Cocoa Fudge Frosting every year for my birthday. I loved digging my fork into the soft yellow cake filled with thick fudgy frosting, topped with another layer of chocolatey deliciousness. It’s fudgy yet creamy and the perfect compliment to just about any flavor of cake. (It’s even amazing straight off the spoon…..not that I’d know anything about that…)
The recipe is from one of those great all-around basic cookbooks everyone needs in their kitchen – Betty Crocker’s New Cookbook: Everything You Need to Know to Cook. This is just one of those terrific general cookbooks that you pull out every time you make a pie crust or oatmeal cookies. And this frosting is a hidden gem – a footnote provides this variation – and I’m so glad my mom spotted it years ago! It’s my very favorite chocolate frosting, and I love making it for my family. And now I want cupcakes….
3 cups powdered sugar
1/3 cup stick butter or margarine (softened)
2 tsp. vanilla
1/3 cup cocoa powder
2-3 T milk
1. Add butter, vanilla and powdered sugar into a large mixing bowl. I use my KitchenAid mixer. (aff link!)
2. Slowly add in cocoa powder. Use caution, as cocoa powder can be a little messy!
3. Slowly add in milk, one Tablespoon at a time, until your frosting is at desired consistency.
Grab a spoon or your favorite cupcake, and ENJOY!!! You’re going to love this frosting!
