I am always looking for EASY weeknight meals. I’ve read so many recipes that claim to be quick and easy to prepare, and still find myself spending far too long in the kitchen. With this recipe, I dumped in a fabulous pre-made sauce and some chicken and walked away. No standing in front of the stove when I’d rather be playing with the kids or chatting with my husband. It was amazing, and I can’t wait to do it again!

This meal literally could not get any easier. If you know how to open a jar, you’re all set. The sauce takes the guesswork out of adding spices and flavors to your meat – it literally does it for you! Without any effort, you’ll have tasty and perfectly seasoned chicken ready for any dish. Ingredients: 

1 jar Herdez®Mexican Cooking Sauces: Red Guajillo Chile

3-4 chicken breasts

To Prepare: 

Pour the jar of Herdez®Mexican Cooking Sauces: Red Guajillo Chile into a dutch oven or large pot. Add in your chicken breasts. Cover. Simmer on medium-low heat for 45 min. or until chicken breasts are cooked through. (Time will vary depending on size/thickness of the breasts you use.)

Once my chicken was cooked through, I removed it from the dutch oven, and put it into my Kitchen Aid Mixer. I used my paddle attachment and my chicken was shredded in no time! Of course, you can always shred your chicken with two forks! Depending on how saucy you’d like your chicken to be, you can either serve it as is – simply shredded, or you can dump the shredded chicken back into the sauce if you like things a little saucier.

We served ours as is, and it was delicious! The meat had soaked up so much flavor from cooking IN the sauce. It was sweet and tangy and a little bit spicy, and was the perfect topping for our nachos! I can’t wait to try this chicken in tacos or on a salad.

The sauce is a little bit tangy, a little bit fruity, with just the right amount of spice. It’s absolutely delicious. You are going to love it, and will want to go buy up all 4 varieties of the Herdez ® Mexican Cooking Sauces. These are the perfect pantry ingredient to have on hand – as they practically  make your dinner for you! Pick one up the next time you’re at the store, and try an easy one-pot meal for yourself!
