I remember a story my mom once told me about the time my dad wrecked his car. Being a doting teenage girlfriend, she wanted to help. These chocolate marshmallow cookies are some of my all-time faves. Take a soft and chewy chocolate cookie, top it with a gooey marshmallow, and then cover the whole thing with a smooth chocolate icing. Amazing. These cookies taste like my childhood, and I love making them for my own children. If you love the combo of chocolate and marshmallow, try these! (This recipe also proves you can bake with a2 Milk®!)
1/2 cup butter or margarine (1 stick)
1 c. sugar
1/4 c. milk
1 tsp. vanilla
1 3/4 c. flour
1/3 c. cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
6 T butter
2 T cocoa powder
1/4 c. milk
1 3/4 c. powdered sugar
1/2 tsp. vanilla
Preheat oven to 350 degrees. Cream together butter and sugar. Add egg, milk, and vanilla. Mix well. Combine flour, cocoa powder, soda and salt. Beat into creamed mixture. Drop onto cookie sheet using a cookie scoop (or rounded spoonfuls). Bake for 8 minutes. Press a marshmallow onto the top of each cookie, and return to oven for 2 more minutes. Remove from oven and cool. (I tend to gently push down the top of the marshmallow immediately after removing the cookies from the oven.)
To make the frosting, combine the butter, cocoa powder, and milk in small pan. Bring to boil and boil for 1 minute, stirring constantly. Cool slightly and add powdered sugar and vanilla. Beat well and drizzle/spread over cookies.
