I remember a story my mom once told me about the time my dad wrecked his car. Being a doting teenage girlfriend, she wanted to help. Not knowing how to fix a car, she suggested that milk and cookies might make everything better. While that comment may have gotten an eye-roll from the 17 year old kid with a beat-up Camaro, for most of us – milk and cookies really does have a way of making things better – that is, unless milk gives you tummy trouble.
Growing up, my mom continued to soothe hurts and celebrate victories with milk and cookies. Now that I’m a mom, I’ve carried on that tradition. Long division got you down? Skin your knee while bike riding? Find that lost toy? Finish your reading goal? A plate of fresh cookies and a glass of ice cold milk just has a way of making bad moments better and good moments great. But as I carried out the tradition for my own family, I often found myself skipping out on the milk. (And let’s be honest – cookies just aren’t the same without the milk!)
I am not alone. Did you know that 1 in 4 Americans experience discomfort after drinking milk? I tend to get an upset stomach after eating a lot of dairy (especially at night). We’ve tried alternative milks- and promptly spit them out4. But a2 Milk® is real cow’s milk! The real culprit behind most people’s trouble digesting dairy is the A1 protein – found in all conventional and organic milks on the market…..except a2 Milk®.
Only a2 Milk® comes from cows selected to naturally produce only A2 protein and no A1 – making all the difference for those of you experiencing dairy digestion issues. But, what if you and milk are BFFs? You’ll still want to check out a2 Milk®! Containing 6x the amount of calcium as soy beverages, approximately 8x the protein of almond beverages and approximately 6x the potassium levels of rice beverages – a2 Milk® is a fantastic (and delicious) beverage option.
Rediscover the love of milk and cookies. Without that pesky tummy trouble, you can’t help but smile a little wider when you pour a glass of milk and sink your teeth into a fresh cookie.

These chocolate marshmallow cookies are some of my all-time faves. Take a soft and chewy chocolate cookie, top it with a gooey marshmallow, and then cover the whole thing with a smooth chocolate icing. Amazing. These cookies taste like my childhood, and I love making them for my own children. If you love the combo of chocolate and marshmallow, try these! (This recipe also proves you can bake with a2 Milk®!)
1/2 cup butter or margarine (1 stick)
1 c. sugar
1/4 c. milk
1 tsp. vanilla
1 3/4 c. flour
1/3 c. cocoa powder
1/2 tsp. baking soda
1/2 tsp. salt
6 T butter
2 T cocoa powder
1/4 c. milk
1 3/4 c. powdered sugar
1/2 tsp. vanilla
Preheat oven to 350 degrees. Cream together butter and sugar. Add egg, milk, and vanilla. Mix well. Combine flour, cocoa powder, soda and salt. Beat into creamed mixture. Drop onto cookie sheet using a cookie scoop (or rounded spoonfuls). Bake for 8 minutes. Press a marshmallow onto the top of each cookie, and return to oven for 2 more minutes. Remove from oven and cool. (I tend to gently push down the top of the marshmallow immediately after removing the cookies from the oven.)
To make the frosting, combine the butter, cocoa powder, and milk in small pan. Bring to boil and boil for 1 minute, stirring constantly. Cool slightly and add powdered sugar and vanilla. Beat well and drizzle/spread over cookies.
*Using a cookie scoop, I made 14 cookies.
