Copycat Costco Chocolate Muffins

I have a confession to make….I LOVE muffins. What’s not to love? Muffins give you a socially acceptable reason to pretty much cupcakes for breakfast. And as far as muffins go, the muffins you can buy at Costco are among my faves. While my fave Costco muffin is the Pumpkin Streusel, my family goes wild for the Chocolate variety. When I found a copycat recipe on Food.com, I new I had to make them.

Aside from eating cake muffins for breakfast, I also love me some morning alone time. There’s just nothing like sipping my coffee in peace before the hustle and bustle of our day begins. This morning, I snuck outside to my picnic table, and enjoyed my morning coffee and one of these tasty muffins. It was the perfect respite before a busy day. A little caffeine. A little treat. Peace and quiet. Perfect morning.

These muffins are absolutely DELICIOUS and taste so much like the muffins you’ll find in the store. Whip up a batch tonight and have them with your coffee in the morning.

Ingredients: 

1 chocolate cake mix

3 eggs

2/3 cup milk

1/3 cup oil

2 T flour

1 tsp. baking powder

chocolate chips/chunks  – *I used half a bag of chocolate chunks, and sprinkled the tops with mini chocolate chips right before baking.

To Prepare: 

Preheat your oven to 375 degrees.

Dump the dry cake mix into a bowl. Add eggs, milk, oil, flour, and baking powder. Mix well. Stir in chocolate chips/chunks. Grease your muffin pans and fill with prepared batter. (I use my cookie scoop! I use 2 scoops for the jumbo muffins.) Bake for approximately 18-20 minutes, or until a toothpick comes out clean. Oven times and temps can vary, so keep a close eye after about 15 minutes!

Eat and enjoy!! (If you make the night before, I like to microwave my morning muffin for about 20 seconds – just to slightly melt the chocolate chips inside!)

This recipe made 6 jumbo muffins and 6 muffin tops. Let’s talk for a minute about muffin pans. I may or may not have a minor addiction to cake pans. BUT, my pan-addiction aside, having more than the standard muffin pan in your arsenal is pretty great. Using a jumbo muffin pan really adds to the feel that you’re truly having a Costco muffin. It’s awesome.

Now, you may ask – “What is a muffin top pan, Bekki?” Great question. A muffin top pan is pretty much amazing – and the answer to Seinfeld’s problem. It gets the “Muffin Top” song from 30 Rock in my head every time I use it, but it’s so so worth it. Upside? You can also use the pan to make incredibly thick and chewy cookies, as shown on my Instagram account. (Are you following me yet? Come say hi to chasing_supermom!)
