We finished up our second year of homeschooling yesterday, and in my book – that calls for a piece of cake! To me, the quintessential summer dessert has to be the s’more. So, when I saw this recipe for S’mores Cake – I knew I had to make it. This was the perfect dessert to kick off our summer vacation. (And it’s crazy easy!)

Can I just tell you how much I love cake mixes? I typically have about a dozen assorted flavors on hand at any given time. I actually prefer them to home-made cake. (Gasp!) I love recipes that take a simple cake mix and just jazz it up a bit. In almost no time (and with very little effort), you have a company-worthy dessert.

(And no one will ever guess the recipe came from the side of a cake mix! Thanks Pillsbury!)

Ingredients

1 chocolate cake mix

Eggs, Oil, Water as called for on back of box

1 can of chocolate frosting

3-4 graham crackers

1-2 Hershey bars

1 1/2 cups mini marshmallows

To Prepare:

Bake the chocolate cake as directed on the box. Allow to cool, and then frost.

Crumble the graham crackers on top of the frosted cake. (This is a fun step for the kids to help with!)

Top with marshmallows and broken bits of Hershey bars. And yes – I know my recipe says to use mini marshmallows, and my photos show big marshmallows. Trust me – this cake would be better with the mini marshmallows, but I was a cheap-o, and had bought the off-brand mini marshmallows, which were a solid clump of goo when we opened the bag. We just made do with the big ones this time around.

Pop the cake under your broiler for about 2 minutes, or until the marshmallows start to toast up. (Yes, I know this seems weird. Trust it!)

Serve right away when the topping is nice and gooey! (Although I have to tell ya – it was great served cold too! You still got the flavor of the toasted marshmallow!)
