Meal Plan Monday : 1/28/19

Another Monday, another meal plan! As always, I hope my ideas spark an idea or two for you. I know how easy it is to get into a rut – always making the same few things. While my very easy-to-please family wouldn’t mind if we only ate spaghetti, tacos, and pizza – I like a bit of variety in my life.

If none of these ideas sound tasty, you can always browse through my Weekly Menu archives.I make a lot of family-friendly food that is easy to make, and easy on the wallet. I’m not a foodie – I just like good simple food. =)

Sunday: Turkey Burgers, Baked Sweet Potato Fries

I use my Kitchen Aid Spiralizer attachment to make these healthy fries. I spray a cookie sheet with cooking spray, top with my curly potatoes, add a little more spray and some seasoning salt. Bake at 400 until cooked through and lightly crispy. SO good, and one of our family faves.

 

Monday: Baked Creamy Parmesan Chicken, Acorn Squash, Orzo

The next time I make this chicken, I am going to blog it. Oh.My.Word. I have never had such juicy and delicious chicken!!

I have also been super into acorn squash lately. While many seem to like it with sweet toppings, my favorite way to eat it is roasted with olive oil, salt & pepper, and real parmesan cheese (not the green can kind!) It is absolutely delicious.

 

Tuesday: Easy  Lasagna Soup, Salad

If you missed this post last week, you’ll need to check it out! Lasagna Soup is one of our favorite soups. It has all the flavors of lasagna without the hassle of making one! My favorite part is the dollop of ricotta on top. SO good! (This flavorful soup also comes together in less than 30 minutes!)

 

Wednesday: BLT Salad

This is SO good and such a quick simple supper to throw together. I baked my bacon in a 400 degree oven until crispy earlier in the day. While I was chopping my lettuce, tomatoes, cucumbers, carrots, and other salad veggies, I baked a package of breaded chicken strips. (Yep, they came straight from the freezer section of the grocery store – and I feel no shame.)

We loaded up our salads with veggies, chopped bacon, and a chopped chicken strip. Absolutely delicious!

*A few of my kids opted to have a chicken/bacon wrap instead of a salad.

 



Thursday: Cheesy Spaghetti Squash Casserole, Copycat Cracker Barrel Chicken Tenders,  Brussels Sprouts

We are huge fans of Cracker Barrel. We FINALLY have one locally – but still don’t manage to go out to eat all that often. So, when we can’t be in the restaurant enjoying our favorite dishes, I make them at home.

I always order the chicken tenders. To make them at home, I mix up Italian dressing, honey, and lime juice. Marinade if you have time. Pour it over the top (reserving a little to put on in the last 5 minutes of bake time) if you don’t. SO good and flavorful.

I came up with the cheesy spaghetti squash casserole as a substitute for their famous hash brown casserole. This lightened up version features squash instead of potatoes, light sour cream, and fat free cream soup. And – it’s delicious!

 

Friday: Instant Pot Taco Rice with Chicken

I am having so much fun with my Instant Pot. I am loving not having to stand at the stove while things are cooking too!

I make this rice with chicken all the time, and was excited to figure out how to make it in my IP. This is a great one-pot meal. We like to scoop up the tasty rice with tortilla chips! (Hope to blog this one soon!)

 

Saturday: Waffles with blueberry compote, fruit, turkey bacon

We always love having breakfast for dinner. I whipped up a simple compote to go on the waffles – and I could have eaten the whole pot. I just cooked down some blueberries with a little bit of water, sugar, and cinnamon. So easy, and so seriously amazing.
