Meal Plan Monday: 4/15/19
Happy Monday everyone! I don’t know about you, but this time of year is absolutely CRAZY for our family. We have so much going on, that the last thing I need to be thinking about is what I’m going to make for dinner! Meal planning always saves me from an extra headache when life gets busy.

Sunday- Baked Chicken Burgers, Oven Fries
To make this, I cut my chicken breasts thin, season, and bake. We serve on hamburger buns topped with condiments and veggies. My oven fries are made using my Kitchen Aid Spiralizer attachment (something I use SO much more than I ever thought I would). I use the thinnest spiral blade, spray with cooking spray, season, and bake. I usually use the broiler during the last few minutes to get the potatoes nice and crispy.
Monday- Lentil Tacos
I cooked my lentils in my Instant Pot in chicken stock with all the spices I’d ordinarily use in ground beef, some green chiles, garlic, and salsa. (You can check out my Homemade Taco Seasoning recipe if you’d like!) I served up the cooked lentils in tortillas with all our favorite taco toppings. I wasn’t sure the kids would go for this – but most of them did!
Tuesday- Easy Weeknight Jambalaya, Corn Bread
This is one of our family favorites. All six of us just love this quick and easy jambalaya. I sometimes make this in my Instant Pot too. This is just a simple and comforting weeknight meal.
Wednesday- Belgian waffles with blueberry compote, turkey bacon, fruit
We have been SO into breakfast for dinner lately! I have also been putting all of our frozen berries to good use. Last year, our blueberry bush just went NUTS and I washed and froze the berries. I love to make a simple compote by mixing the frozen berries with just a splash of water or orange juice, some sugar, and some cinnamon. I boil it until it thickens up. It is incredible on waffles, pancakes, and oatmeal!
Thursday- Hawaiian Pork Sliders, Rice
This is a new fave – mostly because it’s SO easy! I throw some pork into the Instant Pot (or crockpot), add salt, pineapple juice, and a little bit of teriyaki sauce. When it’s cooked, I shred it up and throw it on some King’s Hawaiian rolls with slices of pineapple. The “juice” from the cooked meat is also fabulous on top of the rice!
Friday- Finger Food Fun
My son and I had a lot of fun putting this one together. At the grocery store we grabbed a variety of fresh and dried fruits, nuts, cheese, crackers, etc. I boiled eggs, made chicken bites, and dipped some berries in chocolate for a treat. The picture doesn’t quite show everything we put out, but it’s a good sampling of what we had. Just fun to do something out of the box.
We love a good chicken and rice dish. I like this one because it’s healthier and still a crowd-pleaser. I served this with a side of applesauce.
