Meal Plan Monday: 8/26/19

We are back into the swing of things at our house, and are now in our second week of school! It will take a little while to adjust back to the pacing and routine of school, but we’re all excited to be off on another year of learning adventures.

It’s a tradition in our house that the kids take turns picking the dinner during the first week of school. This menu reflects my children’s choices.

Monday: Yakisoba and Pork Egg Rolls

This is my daughter’s new favorite. She could eat both of these foods all day long. I usually buy a bag of pre-cut slaw mix and use that as my stir-fry veggies.

I do some egg rolls just meat, some meat and veggies, and some just veggies. I season my meat with garlic, fresh ginger, and soy sauce.

We’ve tried both fresh and dried yakisoba noodles, and like both. (When I use the fresh noodles, I discard the spice packet that comes with it, as I think it has a weird “cinnamony” taste.)

 

Tuesday: Best-Ever Ranch Chicken, Cheesy Broccoli Noodles, Peas

This is a great fool-proof chicken recipe, especially if you tend to dry out your chicken. The ranch and breadcrumbs really help to lock in the moisture.

Okay, about the side dish….my daughter is crazy about these noodles, and they are FROM.A.MIX. I don’t get it, but she loves them. They are the Knorr brand.

 

Wednesday: Red Robin

We celebrate our first week of school at Red Robin ever year. It’s become a fun little tradition we all look forward to. We typically go on the weekend, but found out that kid’s meals were only $1.99 on Wednesdays! We couldn’t pass up that deal!

I tried something new this time, and go the Tavern Double. It was delicious!

 

Thursday: Chicken Stuffed Crescent Rolls, Roasted Broccoli, cottage cheese

These little crescent rolls are my son’s favorite food. He can’t get enough.

When I first posted the recipe, I was working with Hormel, and used canned chicken. If that’s what you have on hand, it will totally work out and taste just fine. However, I now use fresh cooked chicken in this recipe. This time, I just cooked my chicken in my Instant Pot, and quickly shredded it. Leftover chicken or rotisserie chicken would also work for this recipe.

*My husband likes this recipe better with 1 pkg. of cream cheese. I like it better with 2. Do what feels right to you.

Friday: Meatball Subs, Tater Tots

My son LOVES meatball subs! Truth be told, I do too! We used to live down the street from a Subway, and I would almost always get a meatball sub. I cooked my meatballs in the Instant Pot. We topped with mozzarella cheese and pickles that we canned ourselves!

 

Saturday: Creamy Chicken Enchiladas, Rice

Most people have seen a variation of this recipe. Mix together cooked chicken (diced or shredded), cream of chicken soup, sour cream, green chiles, and cheese. Fill your tortillas, roll, and bake! These are always a hit and everyone had been asking for them for awhile.

 

Sunday: PB&J

Sometimes the internet makes people seem super perfect. I’m here to tell you that perfect is not a thing. My kids ate dinner with their grandparents, and I honestly did NOT feel like making anything for my husband and I….so we ate PB&J. Keepin’ it real. I didn’t even make a side dish. I think I pulled out the box of Goldfish crackers. Life happens. Tired happens. We ate food. That’s enough. (I mean it.)
