SO many people ask me for examples of my weekly menus. (I actually usually plan a month at a time.) When I began menu planning 3 or 4 years ago, I found that it not only saved us money, but really alleviated some of what I like to call, “4:30 stress”. You know what I’m talking about…You’ve been playing with the kids or getting some laundry folded, and you look at the clock, and shriek, “How can it possibly be 4:30 already?!” I hated not knowing what we were having for dinner, and hated standing and staring at the fridge and pantry even more. Menu planning has really made my job as a mom much easier. I hope that some of my ideas will give you some new ideas to work with that fit your family’s needs. Enjoy, and happy planning!

Monday: Asian Chicken and Rice Bake
Tuesday: Chili Cheese Frito Wraps (Just like they make at Sonic. Flour tortillas filled with bean-less chili, original Frito’s and cheese!)
Wednesday: Pizza Casserole (Small noodles – I use piccolini, marinara sauce, mozzarella cheese, Italian sausage or hamburger, cut up pieces of pepperoni, and any pizza veggies (sauteed and/or cooked as needed) that your family likes)
Thursday: Tuna Melts and Fries
Friday: Layered Chile Chicken Casserole
Saturday: Spaghetti Squash Spaghetti with Garlic Bread
Sunday: Grilled Ham and Cheese Sandwiches
With most of these meals, I serve them with an appropriate fruit or vegetable. I like to keep lots of vegetable blends on hand to use when we don’t have fresh garden vegetables or fresh produce from the store. We also do a lot of canning, so many of our meals are served with our canned green beans.
