It’s Monday, and time to plan out our meals for the week again! Meal planning, as mentioned in my post,7 Supermom Shopping Tips, can not only save you stress and frantic fridge scanning at dinner time, but can save you some serious money!! Meal planning has helped me trim about $100 from our monthly grocery budget, as I buy ONLY what I need to make the meals I’ve planned for. If you’ve never tried planning out your meals, and don’t want to do a month at a time (like I do in my real life), try just one week…Use this week’s plan, or pick and choose from past plans. Monday: Yakisoba – Stir fry your favorite blend of veggies….carrots, celery, snow peas, mushrooms, onions, cabbage if you want to be authentic…Add in your chicken, favorite teryiaki or soy sauce (I add in a dash of brown sugar), and then add in your noodles. You can get fresh yakisoba noodles in most produce sections (It’s with the unusual veggies at Winco), or you could even use ramen noodles in a pinch.
Tuesday: Beef Stew in Bread Bowls – Check and see if your local grocery store sells the small round loaves of sourdough bread. Then, just cut off the top, and hollow out the middle. Fill with your favorite stew recipe. I LOVE having the bread there to sop up the stew, and always save room to eat my bowl!
Wednesday: Pigs in a Blanket – I have a FABULOUS dough recipe that I will share with you another time, but you can use any great white bread or roll recipe to create your own dough wrappers, or simply buy a tube of crescent rolls, and wrap up your favorite hot dogs! We LOVE this meal at our house. A little fresh bread can make an ordinary hot dog seem special.
Thursday: Skillet Lasagna – Turkey sausage, zucchini, and whole wheat noodles make this one a healthy winner!
Friday: French Dip Sandwiches – I would recommend googling a recipe if you don’t already have one. Everyone makes a slightly different variety of “jus”, or the classic beefy broth you dip this roast beef and provolone sandwich in. You can also do this sandwich using your oven, OR, using your crock pot. Supermom says- Whatever recipe you pick, get a GOOD quality roll, and use the provolone! Soo soo good…
Saturday: Spaghetti Bolognese – Just a fun way to jazz up boring spaghetti! (It should be noted that is not a true bolognese….just a simple version for a busy mom.)
Sunday: Italian Chicken – One of my favorite crock pot meals, and a go-to meal on days when I know I won’t have a lot of time in the afternoon to prepare dinner. This crock-pot favorite packs a TON of flavor, produces super-moist chicken, and is a trifecta meal, Cheap (just a few ingredients, which you probably have on hand!), Easy (throw it in…even frozen chicken works!), and The Kids Will Eat It (and isn’t that what we all want?!) Seriously ladies, LOVE this one! (Update- this is currently in my crock pot! I added carrots and green pepper strips, and used a Roasted Red Pepper Italian dressing! Delicious!)

I am great at making weekly menus, but LOUSY at following them.
I always forget to that the meat or forget peas at the store… or my kids eat all the eggs the day before….
