Looking for a sweet little treat to bake up for tomorrow’s big game? These little cupcakes are quick and easy (but make you look REALLY good!), and are SOO very tasty! I love Boston Cream Pie….My mom and I once drove around to 6 or 7 grocery stores looking for one. Well, to make these sweet little cupcakes, you won’t have to head to Boston, or even to 7 grocery stores. Once you find out how easy they are to make however, you will be running to the kitchen!Seriously, who doesn’t love a cupcake? Add in some pudding-custard and a quick chocolate ganache, and you’re in cupcake heaven!

Ingredients:

1 yellow cake mix (and ingredients to prepare as directed)

1 cup milk

1 package Vanilla flavor pudding mix (small box)

1 1/2 cups whipped topping

a little more than half a bag of chocolate chips

To Prepare:

Prepare the cake mix as directed on the package. Pour into a greased muffin pan. (Should yield 24 cupcakes). Bake at 350 degrees for the time allotted on package. Allow to cool completely on wire racks.

Mix together the pudding mix and milk with whisk. Allow to sit for several minutes. Gently fold in 1/2 a cup of the whipped topping.

Cut the cupcakes in half horizontally. Spread about 1 T of the pudding mixture into the middle of each cupcake. Place the top of the cupcake on top of the pudding mixture.

Microwave the rest of the whipped topping and the chocolate chips for 1 minute. Stir. Return to microwave for 30 seconds, and stir until smooth. Let the chocolate mix stand for 15 minutes, or until it has firmed up a bit. Spread on the top of each cupcake. Refrigerate for at least half an hour before serving!

These will go fast! You may just need the defense of the Packers or the Steelers to keep your guests away from these!
