I am here to say that moms should get sick days! My kids have so lovingly shared their germs with me this week, and I am not feeling very well. However, my family still needs (and deserves) quality food. I have a week’s worth of tasty comfort type food for you this week.

Monday: Homemade Chicken Noodle Soup – I LOVE putting a pot of this on the stove. This is one of the few soups that my husband who is NOT a soup guy will eat without complaint. Making chicken soup is also a great thing to do when you have leftover chicken bones from a roast chicken, etc. Throw the bones/carcass in a pot of water, along with some carrot, celery, onions, and your favorite seasonings, and let it reduce down. Strain several times, and you will have the best broth! Add in your chicken, veggies, and noodles, and let it simmer! I like to finish mine with a touch of cream or milk, and some fresh parsley.

Tuesday: Croque Monsieur – The traditional French sandwich has a creamy cheese sauce up on top, but I’m not so sure my kids would go for that. So, you can basically whip up a grilled cheese sandwich with mustard and ham, and say you made croque monsieur! To be a bit more authentic, you can make this classic sandwich with Gruyere cheese.

Wednesday: Country Breakfast Pancakes – To make these, simply make up a batch of your favorite pancake batter, and then mix in a cup of crumbled breakfast sausage. Prepare as usual. The sausage is a really nice twist, and actually tastes awesome with maple syrup. Serve these up with some scrambled eggs, and you have one fabulous breakfast dinner!

Thursday: Crockpot Chicken Spaghetti

Friday: Mexican Lasagna – Use tortillas (corn and flour work well) in place of noodles. Use refried beans in place of ricotta cheese, shredded Mexican blend cheese in place of mozzarella, and a salsa/sour cream mixture mixed with seasoned ground beef for the sauce. Quick, easy , and the kids will eat it (A supermom trifecta meal!)

Saturday: Home-made Fish and Chips! (Oh so much better than fish sticks and bagged french fries!)

Sunday: Pulled Pork Sandwiches -Linked you to a recipe I did for bbq chicken sandwiches. The same recipe works great with pork!
