Is your mouth watering already?? I passed by some packages of store-bought red velvet cookies last week at the store, and thought to myself, I could make those! And I CAN! You can too, and just in time for Valentine’s Day. Red Velvet is one of the most popular desserts shared on the day of love, and these delicious little cookies are a fun way to serve up an old classic. These cookies are SUPER simple to make, very soft, and taste just like this decadent cake! Trust me, if you have a plate of these waiting for your valentine, they will be yours forever! These would also be a fun treat to send with your kids in their lunch on Valentine’s Day, just to let them know you care. Tuck a few of these in their lunches with a little note, and brighten their day!

Ingredients:

1 box Red Velvet Cake mix (Yep, a cake mix!)

2 eggs

1/3 cup oil

1 cup white chocolate chips

Sounds easy already huh?

To prepare:

Mix all of the ingredients together.  Place cookie dough balls on ungreased cookie sheet. (I like to use my Pampered Chef cookie scoop to make my balls uniform in size.) Bake at 350 for approximately 8 minutes. Take the cookie sheet out of the oven, and allow the cookies to finish cooking OUT of the oven. I leave my cookie sheet on a wire rack for several minutes, before transferring the cookies off of the pan. Over-baking cookies is the fastest way to ruin them. In my opinion, unless it is an Oreo, a cookie should be SOFT! Don’t be afraid to underbake just a tad…

These cookies stand alone without frosting, or taste great with a little dollop of cream cheese frosting up on top. (My kids also like to add a sprinkle of red sugar on top for fun!)
