I love cookies….The cookie monster and I may just be soul mates…I also have a bit of a weakness for cookie dough, and I eat far too much of it for my own good. My affinity for the doughy goodness is one of the many many reasons I love and adore these cookies…(there is no dough to tempt me!) Not only do I actually save the batter for the actual cookies, but the finished product is positively scrumptious! I made a batch a few days ago. They are gone now, and I am seriously mourning the loss. These chocolate bites of heaven are so easy to make, require no use of your oven, and you probably have all of the ingredients on hand (especially if you have a “Well Stocked Pantry!“)

There are many versions of these classic little cookies, but I got this one from the Food Network. (And this is actually one of their recipes that I felt like I could make!)

Ingredients:

2 cups white sugar

4 T cocoa powder

1 stick butter or margarine

1/2 cup milk

1 cup peanut butter (the Jif or Skippy variety works best for this. The natural kind that requires stirring does not give the cookies the same consistency.)

1 T vanilla extract

3 cups oatmeal

To prepare:

In a large saucepan combine the sugar, cocoa powder, milk, and butter. Stir constantly and bring to a boil. The next step is crucial! Let the mixture boil rapidly for one minute. If you skimp on the boiling, your cookies can be grainy and awful. Stir well while boiling! (Trust me, someone gave us a plate of these once where they had not made them correctly, and they went in the trash!) Remove from heat, and stir in the peanut butter and vanilla. Stir until smooth and the peanut butter has melted. Add in the oatmeal. The mix will still be slightly “wet” and gooey. Scoop the cookies onto a cookie sheet (you may line with waxed paper if you wish, but I didn’t have any, and they didn’t stick for me!) I found that using my Pampered Chef cookie scoop worked really well. Refrigerate your cookies for at least an hour, or until cooled and set.
