Potatoes….I have always had a serious love affair with potatoes. My family and I often use and rely on the Idahoan family of products to help get a great and tasty dinner on the table. This is your chance to show off your creativity, cooking, and originality. The rules are simple. Create ANY recipe using an Idahoan product and submit it to be judged. Recipes can be submitted now through April 3rd. I will be preparing the submitted recipes, and will select one grand prize winner, and two runners-up. We love the mashed red potatoes. After they are made I fold in 1/2 cup parmesan cheese. They are the BEST!

I guess I’m boring. I’ve only ever used instant mashed potatoes for “instant mashed potatoes”. The only potato recipes I have are from frozen potatoes. I’ve never even thought to use instant mashed potatoes in a recipe. I’ll have to check out their recipes, but doubt they’d let me submit one of those. Have fun with your challenge.

I like to make a quick version of Colcannon using Idahoan Instant Mashed Potatoes. Here’s what I do to make a serving for two (and you’d double it to make a serving for 4, etc.).
Slice two Brats (or sausages, or even hotdogs) into coins and sautee in a little olive oil until browned. Remove meat and set aside, covered, to keep warm.
Chop half a sweet onion. Add a little butter to the pan, toss in the onion, lightly salt and sautee onion until just about soft.
Slice 1/2 head cabbage (I usually use plain old cabbage but if you want to be fancy, you can use Savoy cabbage). Add to onions in the pan. Lightly salt and add a little pepper and a bay leaf and cook until they’re the texture you like. Remove bay leaf.
Prepare Idahoan Mashed Potatoes for 2 as directed on the package. I add a little extra butter but you don’t have to.
Spread prepared potatoes on a plate. Top with onion/cabbage mix. Top that with cooked Brat (or sausage or hot dog) coins. Enjoy!

i follow the recipe on the box for mashed potatoes for 4 servings to that I add i/2 cup of sour cream and a small package of cream cheese blend into potato mixture for creamy delicious holiday mashed potatoes!
I have a potato recipe that’s adapted from a recipe of my brothers. It’s not at all healthy, but oh so yummy!!
CHEESY POTATOES
8 medium Idahoan potatoes (I sometimes used 10 depending on size)
1 stick butter
1/2 cup sour cream
1 cup shredded cheese
1 cup chopped cooked bacon (optional)
Salt and pepper to taste
Peel and cut potatoes. Boil in salted water until tender. Drain and mash like you were making mashed potatoes.
Mix in butter, the sour cream and 1 cup of the cheese. Salt and pepper to taste.
Spread potatoes in casserole dish. Sprinkle top with cheese and optional bacon if desired.
Bake in 350 degree oven for 20 minutes or until potatoes are warmed and cheese is bubbly.
Ooops….I made a mistake…I don’t mix any cheese into the mashed potatoes mixture. (I changed that from my brother’s original recipe…sorry) I only sprinkle 1 cup on top.
