Cheese….Bacon….Mushroom…and Idahoan Four Cheese Mashed Potatoes…Can you say DELICIOUS?! Today, I was able to try out another recipe from the great folks at Idahoan. I made Four Cheese Potato Stuffed Mushrooms (and I won’t tell you how many I’ve eaten….)

These were SUPER easy to make, and would be a terrific little appetizer to bring to the next party you go to, to serve at your next get-together, or to have on the table for your book club, baby shower, game night, holiday, etc. I think most people are intimidated by the word appetizer…We have the false notion that appetizers are hard to make, or are fussy and pretentious…I am here to tell you that you can prepare a tasty appetizer that is packed with flavor in about 10 minutes! These stuffed mushrooms will disappear off the platter! SOO easy and SOOO good!

Here is what you’ll need to make these awesome little mushrooms!

1 4oz. package of Idahoan Four Cheese Mashed Potatoes (prepared)

12 large or 18 medium mushrooms

3 T olive oil

3 T chopped chives (green onions would work as well)

1/4c finely chopped bacon or prepared bacon bits

1/2 c. shredded cheddar cheese

2 T minced garlic

To Prepare:

Start by preparing your bacon. I like to make my bacon in the oven! There is no mess, no greasy microwave, and the bacon comes out cooked to perfection every time. I put my bacon strips on a walled cookie sheet, and baked them in a 425 degree oven for about 8 minutes.

8 minutes and no mess later, I had beautiful crispy bacon!

While your bacon is in the oven, start preparing your mushrooms. Remove the stem from each mushroom. (My three year old promptly ate each stem!) Remember not to rinse your mushrooms in water! Mushrooms are like sponges and will soak all the water up. Instead, wipe them clean with a damp kitchen towel.

In a baking dish or a walled cookie sheet, spread 3 T of olive oil, along with the minced garlic. I used my garlic press to save time!

Next, prepare your 4 Cheese mashed potatoes! SO simple! Simply pour 2 cups of boiling water into a large bowl, and mix in the potato mix. In about 2 minutes, you have the most delicious 100% REAL mashed potatoes without any of the work!

Simply prepare as directed on the package, and voila! You will have some of the tastiest potatoes you have ever tasted!

Stir in the chives and the bacon. Stuff the mushroom caps with the potato mixture.

Don’t they look great already?! Top each mushroom with the grated cheddar cheese! (When I prepared mine, I accidentally mixed the cheese into the potatoes, and it turned out great!) With cheese, bacon, and potatoes, I don’t think you can go wrong! Pop your mushrooms into a 350 degree oven for 20-25 minutes. The mushrooms will soften, the cheese will melt, and these tasty little bites will become irresistible!!

These were so simple, and came together so quickly. I will definitely be making these again, and can’t wait to share them with our friends and family!
