Are you ready for another fabulous (and award-winning) recipe straight from the  Idahoan Chasing Supermom Recipe Challenge!?! Today I get to announce another of the runner-up winning recipes!  I was fortunate enough to team up with the awesome people at Idahoan to seek out great new recipes featuring any one of the amazing Idahoan potato products. We were in potato heaven at our house as I had the “job” of creating all of the wonderful recipes that were sent into the challenge! It’s a tough life I lead ladies…whipping up amazingly creative recipes using an awesome product….the trials I go through for this blog. =) I was so impressed with all of you, and had some tough decisions to make! The Chasing Supermom readers sure know how to cook! (And, it doesn’t hurt that Idahoan has such a tasty line of potato products!!)

This recipe was sent in by Heidi K. I served this recipe to my family for breakfast, but you could definitely serve it as a dinner as well! This was one of the most creative recipes, and I loved that it featured the potatoes in a “non-traditional setting.” I mean really….who thinks of mashed potatoes when they hear the word “quesadilla?” However, I have got to say that tortillas, potatoes, and cheese were definitely meant to find one another…Oh the potato goodness…You will LOVE this recipe…the combo of the gooey cheese, smoky chiles, smooth potatoes and spicy sausage combine in a wonderfully tasty way! Here is what you’ll need to create the Idahoan Potato and Sausage Quesadillas at your house!

Ingredients

1/2 lb bulk Italian sausage
1 c hot milk
2/3 cup dry Idahoan potato buds mashed potatoes
2 T finely chopped onion
2 T canned chopped green chilis
1 T butter or margarine, melted
1 T finely chopped fresh parsley
1 small clove garlic, finely chopped
1/4 t salt
1 T vegetable oil
10 (6-inch) flour or corn tortillas
12 oz (or 1.5 cups) grated Mozzarella cheese

First, you’ll want to cook your sausage in a skillet over medium high heat until brown. Then, drain your sausage.

Next, mix together the hot milk, unprepared potatoes, onion, melted butter, parsley, green chiles, garlic and salt. Next, mix the sausage into the potato mixture.

Heat the oil on a griddle over medium heat. Place 2 T filling (or more…I made mine a little bigger than the recipe said to) on each tortilla. Top the filling with grated cheese.

Fold each tortilla over onto the filling. Heat on griddle, turning once, until cheese is melted. Serve with salsa, guacamole, or sour cream!

These were crazy good (and highly addictive!) I hope you will consider making these Idahoan Potato and Sausage Quesadillas for your family! These would make an awesome brunch item, a tasty dinner, or a fun way to satisfy a late-night craving!
