It’s a new week, and time to start planning our menu. Menu planning has saved me time, money, and most importantly, from the 4:00 “Oh no, what on earth am I going to make for dinner?!” panic that can set in if you’re not prepared. I love the way meal planning has helped our family…We eat a wider variety of foods as I don’t have to rely on old stand-bys, and get the chance to try new recipes weekly. I love not wandering aimlessly around the grocery store looking for things that “look good,” or desperately rummaging through the pantry trying to scrape together ingredients that will make a composed dish…I simply pull out my cookbooks, surf the internet, and ask the family what sounds good several days before my new week (or month, or every other week) begins, and make up my shopping list of what I’ll need. Ready for some new ideas? Here we go!

Monday: Vanilla Belgian Waffles with strawberries, chocolate butter, and whipped cream! (Yep, you heard me right!) Sounds heavenly right?! To make the chocolate butter, simply stir in a tablespoon or two of cocoa powder into softened butter…It is AMAZING!

Tuesday: Grilled Salmon Burgers with Rosemary Potatoes – Dice up your potatoes (I like to use red potatoes), and coat with olive oil, salt and pepper, and fresh rosemary! Bake or grill until fork tender..So good!

Wednesday: Paula Deen’s Mexican Chicken – SOO super good, and truly a pantry cooking classic, and a Supermom Trifecta Meal (Cheap, Easy, and The Kids Will Eat It!)

Thursday: Idahoan Potato and Sausage Quesadillas! This was a contest winner from a promotion I ran a few months ago…It was amazing, and I know you’ll love it! The combination of the smoky sausage, chiles, and potatoes will change your perception of the average quesadilla!!

Friday: White Chicken Pizza – Your favorite dough, topped with an alfredo sauce, diced chicken, spinach, and mozzarella cheese! Delicious!

Saturday: Meatball Sub Sliders – Cut your favorite rolls in half, and top with two meatballs, your favorite marinara sauce, provolone cheese, and your choice of veggies. We make this small sub favorite all the time! Perfect size for little hands!

Sunday: Creamy Crockpot Chicken- Frozen chicken breasts, baby carrots, diced celery and onion, one can of cream of chicken soup, a dash of tarragon, and fresh pepper. Put in your crockpot and cook on high for four hours. Serve over rice. This is SO easy and so good!!
