I am so excited to be posting another weekly menu for you! I took a break from my Meal Plan Mondays, and am ready to be back in full swing. I am a HUGE believer in meal planning. Not only does meal planning save you money at the grocery store, but it saves you time, and stress! No more wondering at 4:00 what you’re going to make for dinner! When your starving five year old starts asking, “What’s for dinner? What’s for dinner?” , you will actually have a response! I also love that meal planning can prevent dinner-time ruts. It is so easy to get into the habit of making the same handful of dishes over and over….I love to try new recipes and mix them in with old favorites. I hope you’ll find today’s weekly menu helpful! Monday: Chef Salad – Keep this one kid friendly by letting everyone create their meal salad bar style. Have a wide variety of meats, cheeses, veggies, eggs, etc for everyone to choose from! Even the pickiest eaters will sometimes choose this salad, as they can load up on ham, cheese, and other fun toppings! (And if your kids aren’t into salad, simply make some ham and cheese roll-ups, and serve them the other veggies with some ranch! Hard boiled eggs are great sources of protein too!)

Tuesday: Pretzel Chicken – Coat your boneless skinless chicken breasts or cutlets in your favorite honey mustard. Then, coat the chicken in crushed pretzels. Bake in a 350 degree oven until chicken is no longer pink. Serve with rice, pasta, or veggies!

Wednesday: Sausage and Potato Quesadillas (This was an award winner in a contest I ran several months ago. Though it sounds a bit different, the flavors in this dish combine in such a delicious way! I know you will love this new twist on an old favorite!)

Thursday: Pancakes – I love to do breakfast for dinner, and pancakes are something that my whole family loves! Serve with some scrambled eggs and fresh fruit! You can use fresh fruit as a topping as well. (I also love to use my homemade jam on top of pancakes! Yummy!)

Friday: Italian Style Meatloaf and Angel Hair Pasta – This was a twist on meatloaf that I developed awhile ago. I love the flavors in this moist meatloaf! This tastes just like your mama’s meatballs!

Saturday: Fajitas – This is great with grilled chicken as well as chicken simply cooked on the stove top in a skillet. Season with your favorite seasonings, and add your favorite sauteed veggies, cheeses, and toppings! I serve this with spanish rice and refried beans.

Sunday: Crockpot Chicken and Corn Enchilada Casserole (I saw this recipe in my latest Schwans catalog, and have to try it! You can of course use your own chicken and corn!)
