It’s Monday, and time to plan out another week’s worth of meals! If you’ve followed the blog for very long, you know how much I LOVE and believe in menu planning! It saves time, money, and stress!! (Sometimes, I think not having to worry about what on earth I’m going to make for dinner is what matters to me the most!)
We have SO much on our plates as mothers….Why not save yourself some time and trouble, and just figure out in advance what you’re going to make for dinner?! It saves time and money at the store, and you never have to stare blankly into your fridge and say, “What in the world can I make out of x,y, and z!”

Monday:BLT Chicken Salad – One of the only ways I can get my family to eat salad (except for my three year old who asks for it constantly) is to load it up with lots of meats and toppings! Take your favorite lettuce, add tomatoes, crumbled bacon, and grilled or breaded chicken strips. I like to add cheese, green onions, and croutons to mine as well. Give your family a mini salad-bar and let them select their own toppings! This is a great meal to help stay cool in the heat!
Tuesday:Tuna Crescent Sandwiches – Unroll your favorite crescent rolls, and fill with a mixture of tuna, frozen veggies, cheese, pickle, condiments…whatever YOUR family likes! Roll up, pinch the ends to seal and bake at 375 for about 15 minutes. These are cute little sandwiches that you can customize to individual tastes!
Wednesday: BBQ Time!! – Throw some hamburger patties, corn on the cob, and foil wrapped potatoes on the grill! Enjoy the last few weeks of summer (and if your house is anything like mine, give yourself a little break from the cooking for the night!)
Thursday: Creamy Chicken Enchiladas – This is one of my go-to company meals! (I will be posting the recipe one of these days..) There are TONS of versions out there, so if you google this, you’re sure to find one you love! This is basically chicken in a creamy white sauce with cheese, chiles, and onions…SO good!!
Friday: Pizza Casserole – This is a fun way to get your favorite pizza flavors in a pasta! This is one of my children’s favorite casseroles! They ALWAYS ask for seconds!
Saturday: Sandwich Bar – Put out a whole smorgasbord of toppings and buy some fancy sandwich rolls (our bakery has awesome ones!), and let your family make up their own sub sandwich. We usually have the broiler on, in case someone wants to melt their cheese, and I make sure to offer lots of variety in the meats, cheeses, veggies, and condiments. (I do NOT put out the pb&j when I do this, as I like to encourage the kids to try new things!) Weekends are crazy, and a sandwich bar is an easy thing to do that can please a variety of people!
Sunday: Slow Cooker Lasagna – Sunday is my favorite day to use my crock pot, and this is a super easy and tasty recipe!! Who doesn’t love lasagna? This is sure to be a crowd-pleaser!
