Today is National Pancake Day, and I wanted to pay tribute to America’s favorite breakfast. So, in honor of the flapjack, here is “short stack” of some of my favorite pancake recipes and treats! Enjoy!!

3. Bacon Pancakes
I found this vintage advertisement for Aunt Jemima pancake mix, and longed for simpler times….when people had the ingenuity and lack of respect for heart disease to derive such a tasty breakfast concoction….I think we need to bring back the bacon-cake….and soon….

6. Pumpkin Chocolate Chip Pancakes
I found this recipe over at Lauren’s Latest, and thought it sounded like such a homey and delicious breakfast!

Holy yum. Lightly seasoned with cinnamon, these pancakes are topped with an apple-pie like topping for one memorable breakfast!
Have a breakfast fit for “the king.” With a nod to Elvis, these pancakes come chock full of peanut butter and peanut butter chips, and are topped with bananas. Thank you, thank you very much. =)
