I’d never made an apple pie before I met my husband. Then, along came David….thousands of miles away from his mom and her special apple pie. Needless to say, I learned how to make an apple pie in a hurry, and have since made dozens. While I’ll admit I make a pretty good pie, most nights, I just don’t have the energy to deal with the crust. This adorable little sundae is the answer to my apple pie cravings….all the taste…WAY less work! We had this as part of our “Family Fun Night” this past week, and my daughter said it was the most beautiful sundae she’d ever seen. =) While I’m not sure about that, this is definitely fancy enough to serve to company…or you know….just to make on a random Wednesday. =) Enjoy!
Here’s what you’ll need:
Apples:
3 large Golden Delicious apples
1/4 cup brown sugar
1/2 t cinnamon
juice of 1/2 a lemon
Peel, core and chop the apples. Combine the apples, sugar, cinnamon and lemon juice in a pan and cook over medium heat for 10-15 minutes, or until the apples are soft. A slight syrup will develop as you cook the apples. Remove from heat and allow to cool for several minutes before serving.
Crumble:
1/4 cup oatmeal
2 T brown sugar
2 T flour
1 T butter
sprinkle of cinnamon
Mix together the dry ingredients. Cut in the butter until the mixture is crumbly. Spread on a cookie sheet and bake at 350 degrees for about 5 minutes, or until lightly golden brown and crunchy.
Other Ingredients
vanilla ice cream
whipped cream
caramel sauce
To Prepare:
Layer ice cream, apples, whipped cream, caramel and crumble. Repeat the layers one more time.
This layered sundae is a stunner. While simple, this could easily be served to company. I know you’ll love this apple pie sundae! Share it with an apple pie lover!
