Everyone loves good old-fashioned Rice Krispie treats. They’re a little marshmallowy slice of Americana. Nostalgia on a plate. We grew up with those gooey little bars in our lunchboxes. They were the perfect treat.
Since having children, I’ve begun to dabble in cereal cookies, playing around with the classic recipe. I love to create new versions of the tried and true recipe classic. This wonderfully green version is just perfect for St. Patrick’s Day. When I saw the Limited Edition Green-Only Lucky Charms at the grocery store, I knew I had to snag a box and come up with something fun.
This is an easy substitution and a fun way to put a twist on an old favorite. Your kids will love these gooey green bars featuring one of their favorite cereals.
Ingredients
6 cups Lucky Charms cereal (I used the Green-Only, but regular will be just fine!)
3 T butter or margarine
1 bag marshmallows
5 drops green food coloring (optional, but so much fun!)
To Prepare
1. Melt the butter and marshmallows in a large pan over medium heat, stirring constantly.
2. When melted together and smooth, remove from heat and stir in the food coloring.
3. Gently stir in the cereal.
4. Press into a sprayed 13×9 pan. *To press the gooey mixture down, I typically coat my hands with butter, and press down on the cereal treats. It’s messy, but it does the trick! (Plus, it’s fun to show your kids your messy butter hands and ask for hugs.) =)
