I have been super-slacking when it comes to meal planning. I’m a HUGE plan and champion of meal planning, and I’m so ready to get myself back in gear and start planning out our meals. Meal planning saves money at the grocery store, but more importantly (to me) saves me the STRESS of standing around the kitchen at 4:00 thinking “What on earth am I going to make?!” I love the confidence that comes from knowing exactly what we’re having and the assurance that all of the ingredients are on hand. Plus, we’re less likely to stay in our dinner rut.
A few weeks ago, I asked a question on the Chasing Supermom Facebook Page (come join our online community!) about what you serve your kids for breakfast….and me and my trust Eggos were put to shame! I’ll admit that to date, most of our weekday mornings include easy peasy things like cold cereal, instant oatmeal, and microwavable French toast. I know…not the best start to the day. It’s no wonder that my kids can end up cranky and irritable. So, inspired by some of the incredible moms that follow the blog, I decided to change the way we do breakfast. I decided to add breakfast to my meal planning. We’ll give it a whirl and see how it goes. I’m excited to start my kids off with a homemade breakfast and see how that affects their attitude and energy level. (And, I may end up starting my morning with more than a Diet Coke!)
I also decided to plan out a few treats. This gives me something to look forward to and both feeds and controls my baking addiction. =)

(Because really, isn’t that what we’re going for?!)

Breakfast: Chocolate Chip Pancakes
Dinner: Lasagna, Salad, and Garlic Bread
Monday
Breakfast: Cinnamon Streusel Muffins and Fruit
Dinner: Tacos and Strawberry Pretzel Jello Salad
Treat: No Bake Lime Cheesecake
Tuesday
Breakfast: Homemade Egg McMuffins (I’m going to make extras and freeze them!)
Dinner: Crispy Cheddar Chicken , 7-UP Biscuits, Mashed Potatoes
Wednesday
Breakfast: Bisquick Coffee Cake
Dinner: Homemade Wheat Bread, Chicken and Rice Casserole (A family favorite! I’ll have to take pics and post this one!)
Thursday
Breakfast: Hashbrowns and Turkey Ham
Dinner: Grilled Cheese and Soup (Thursdays are my husband’s late night at work, so the kids and I have a simple dinner.)
Friday
Breakfast: Toast and Campbelled Eggs (Seriously, if you haven’t tried these yet, you MUST! These are hands-down the BEST eggs I’ve ever had!)
Dinner: Spaghetti, “Olive Garden” Breadsticks, Green Beans
Treat: Ice Cream Cone Cupcakes
Saturday
Breakfast: Cranberry Orange Muffins and Sausage
Dinner: Irish Sundaes (Baked potatoes with lots of toppings – This is also a great and SIMPLE idea for entertaining!)
