It has finally started to warm up here in the Pacific NW. The sunshine makes me think about getting outside with the family. One thing we love to do with the kids is make s’mores. We snuggle up around our fire pit, toast marshmallows, talk about our day, and listen to the sounds of summertime. Sometimes however, the backyard camp-out isn’t always an option. I’ve been wanting to find a great indoor s’mores bar recipe for years….something to finish off a great bbq or share with the kids out on the deck on a warm and breezy evening.

As it turned out, my two year old gave me the opportunity to make my indoor s’mores bars just a few days ago. I came into our kitchen to find nearly an entire box of Golden Grahams dumped out on the counter. Golden Grahams everywhere. They hadn’t hit the floor, so they weren’t ready for the trash, but the thought of putting them back in the box didn’t sound fun either. So, I seized a baking opportunity and scooted all the cereal into my measuring cup. I had just enough to make a 1/2 recipe of these amazingly delicious indoor s’mores bars.

Ingredients

8 cups Golden GrahamsĀ® cereal

5 cups mini marshmallows

1 1/2 cups semi-sweet chocolate chips

1/4 c light corn syrup

5 T butter or margarine

1 t vanilla

1 additional cup mini marshmallows

 

To Prepare

1. Measure your cereal into a large mixing bowl.

2. In a microwaveable bowl, mix together your 5 c marshmallows, chocolate chips, corn syrup, and butter. Microwave for 1 minute. Stir. Microwave for an additional minute. Stir.

3. Stir in vanilla.

4. Pour the chocolate mixture over the cereal and stir to coat. Mix in the additional cup of mini marshmallows.

5. Pour the mix into a greased 13×9 pan, and let stand uncovered for at least 1 hour.

*The above is for a full recipe. A 1/2 recipe will make an 8×8 pan. (We like to make 1/2 batches, so that everyone only has the opportunity to eat one or two!) A full recipe would be a great dessert to make for a bbq, potluck, or get-together. They will go fast!
