I am a HUGE fan of JELL-O. Maybe it’s my obsession with all things from the 60’s (when JELL-O was at the height of fancy dining), or maybe it’s because it’s just plain delicious. It’s quick, easy, and a treat that everyone at our table loves. My sweet little girl was literally caught red-handed with a few stolen Roll-ups. She LOVES them (and so do her siblings!)
When I came across this recipe on Joy of Jello, I knew I had to try it for myself. Let me tell you, this was a HIT! About five seconds after each of these little pinwheels had disappeared from the plate, my son asked, “You’re going to make those again tomorrow night right?” And, I did. (And a few more times since then!)
Here’s what you’ll need:
Ingredients
1 3oz package of JELL-O (I’ve used the sugar free boxes which are .44 oz and that works too. Basically, you need a small box of JELL-O.)
1/2 c. water
1 1/2 cups mini marshmallows
cooking spray
To Prepare
Mix together the water and JELL-O mix in a glass bowl, and microwave for 1 minute. (Yep, microwave! This is SO easy!)
Remove the bowl and stir well. Put back in the microwave for 30 seconds, to ensure the JELL-O fully dissolves.
Add the marshmallows, and return to the microwave for 30-40 seconds, or just until the marshmallows start to puff. Make sure not to overcook the marshmallows, or you won’t have 2 layers.
Remove from microwave and whisk until the marshmallows are dissolved.
Pour into a well-sprayed 8×8 glass pan, and refrigerate for 45 minutes to an hour.
Remove the pan from the fridge. The JELL-O will be very firm and super easy to handle. Gently lift and slide the entire slab of JELL-O out of the pan and set it on your counter. Gently roll the JELL-O.
Cut the JELL-O log into slices. I found it easiest to use my sharpest knife.
These are super cute, delicious, and surprisingly easy to make. I love that they set up so quickly too! These are the perfect afternoon snack or a fun after-dinner treat for the whole family.
