A few months ago, you’d probably think the Cookie Monster lived at our house just by looking at our kitchen counter. I LOVE to bake, and used to make cookies twice a week. Recently however, we’ve made a few lifestyle changes at our house, and I’m baking less and less.

I’ve discovered however, that sharing what I bake with others is a win-win situation. I get the joy of baking, a few cookies (instead of a whole batch beckoning to me from the counter), AND the gift of getting to love others through sharing a treat. There’s just something special about sharing a plate of food with others. This week, I decided to make these cookies for our leadership team meeting at church. I kept a dozen cookies at home, and will pass on the rest to others tonight. Win-win.

So, even if you’re living a healthier lifestyle, there is no reason you have to give up baking. Have a couple, and share the rest. Moderation is a good thing.

These cookies are a good thing too. If you’ve never made cookies using a cake mix, you’re in for a treat. Cake mix cookies are soft, chewy, and delicious! I particularly love using a cake mix to make chocolate peanut butter cookies, as my traditional recipe tends to dry out quickly. These however, stay nice and soft for days.

Here is what you’ll need….just 4 things!! Oh how I love pantry cooking! cookies (1 of 1)

Ingredients

1 chocolate cake mix

2 eggs

1/2 cup oil

1/2 cup peanut butter chips (totally delicious with chocolate chips too!)

To Prepare

1. Preheat your oven to 325.

2. Mix together the dry cake mix, eggs and oil until well incorporated. Stir in the chips.

3. Drop dough by rounded teaspoonful onto a cookie sheet. Bake approximately 7 minutes. (Oven times and temps will vary. Keep a watchful eye. Unless it’s an Oreo, cookies shouldn’t crunch!)

Now, practice your self-control and enjoy one or two cookies. Now, pile the rest up on some cute plates and make someone’s day. Enjoy your week and choose to bless someone this week…If not with cookies, with a smile, a listening ear, a meal…and see how serving others actually changes YOU!
