I can’t even begin to explain just how good this is. This is one of those recipes that has been floating around my Facebook feed for awhile, and I could resist no longer. Temptation won out, and this sinfully delicious fudgy pie was made….and then eaten with great joy. It reminded me of my mom’s chocolate marshmallow cookies (which I will have to share with you another day!) The brownies are fudgy and chewy, and when topped with the melty marshmallows and chocolate icing…Oh.My.Word. It is no wonder this recipe was voted “Best Blogger Recipe of 2012.” It heralds from The English Kitchen (which happens to have a ton of tasty recipes!)

If you are able to resist the lure of brownies topped with gooey marshmallows and rich chocolaty icing, I commend you….and you deserve some type of healthy maven medal. If however you’re anything like me, and feel that sometimes, a slice of pie is a good necessary thing, you’re definitely going to want to add this to your recipe box. Wait. Scratch that. Go make it. Right now. I implore you. You will thank me. Your personal trainer won’t – but YOU will. =)

mississippi mud pie

Ingredients

3/4 cup flour

1 cup sugar

1 tsp baking powder

1/4 cup cocoa powder

1/4 tsp salt

1 stick melted butter

2 eggs

2 tsp vanilla

2 cups mini marshmallows

For Icing

1/2 stick melted butter

1/4 cup cocoa powder

1/4 cup evaporated milk

1 cup powdered sugar

*I modified the recipe a tiny bit, omitting the nuts, using a different type of pan, and I changed the ingredients/amounts to be USA friendly. I also don’t do things like sift, and separate wet/dry ingredients. I’m a busy lady. And it turned out the short-cut way. =)

To Prepare

1. Preheat your oven to 350 degrees.  Spray a 9 inch spring-form pan with cooking spray.

2. Mix together the butter, sugar, eggs and vanilla until light and fluffy.

3. Add in the flour, cocoa powder, baking powder, and salt. Mix until incorporated.

4. Pour the brownie mixture into your spring-form pan and bake for about 25 minutes, or until a toothpick comes out clean. (Oven temps vary, so keep a watchful eye!)missmud (1 of 2)

5. Meanwhile, mix together your icing by placing all icing ingredients into a bowl and whisking until smooth. (I rinsed out my KitchenAid really quickly, and then mixed up my icing in that. Came together in a snap!)

6. Remove your brownies from the oven and sprinkle the marshmallows on top. Put the pan back in the oven for 2-3 minutes, allowing the marshmallows to melt.

7. Pull the brownies out of the oven, and pour the chocolate icing on top of the warm marshmallows. Yes, it will be melty and gooey, and your kitchen counter will get lovely drops of chocolate goodness on it. (The mess is so worth it.)

8. Allow the brownie pie to cool completely, cut in half wedges and serve. (Basically you’ll be doing an amazing job if you don’t devour the whole thing on your own!)
