EVERY time I go to the grocery store, I get teased for the quantity of bananas I buy. Literally – every. time. I’m pretty sure my children are part monkey, because regardless of buying out half of my grocery store’s stock (not quite, but close!), I NEVER have enough left over to make banana bread. And ladies, that’s just plain sad. I make killer banana bread. If you don’t want to take my word for it (and I highly suggest you don’t), you can make some for yourself. Then, earlier this week, someone gave my family a giant box of bananas. I probably have a good 10 dozen bananas left, and have already made 2 batches of bread plus Lord knows how many my four kiddos have eaten. So, as I was pondering what to do with my own personal mountain of bananas, it came to me. And now, I wonder where it’s been all my life. Nutella.Banana. Bread. Oh have mercy.
Ingredients
1 1/4 c. sugar
1/2 c. stick margarine
2 large eggs
3-4 mashed bananas
1/2 c. buttermilk (Seriously, who keeps this on hand? I just put a teaspoon or two of lemon juice into regular milk, and wait a minute or so until it starts to curdle a bit.)
1 teaspoon vanilla (and I always throw in a bit extra..I LOVE vanilla!)
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2/3 cup Nutella (and honestly, next time I’d probably bump it up just a bit…but it was AWESOME how I made it too!)
To Prepare
Preheat your oven to 350 degrees.
Cream together your sugar and butter. Stir in your eggs, and mix well. Add the milk and vanilla, and mix again. Add your bananas.
Stir in the flour, baking soda, and salt.
Now add in God’s gift to your pantry – Nutella. =) Mix well.
Pour your batter into two greased (I use Pam) loaf pans. Bake at 350 degrees for about an hour, or until a toothpick inserted into the center comes out clean.
Now, try to be generous and save a slice or two for your family. (Although, heaven knows I won’t judge you if you can’t control yourself!) Enjoy!!
