I am a HUGE fan of leftovers. Make those leftovers holiday leftovers, and I’m all set. I’m looking forward to lunch at 9:30. (Okay, and maybe I’m having stuffing or slivers of cold turkey for breakfast….) Maybe it’s the budget enthusiast in me, or perhaps all of those childhood tv specials on recycling have sunk in, but I LOVE to re-purpose food. Taking something and then using it again in a new way is exciting to me….especially when you’re starting out with a quality product.

While using your leftover Hormel Cure 81 ham or Jennie-O Turkey for sandwiches is tasty, and a given (and superior to your standard deli meat any day!), I like trying to come up with creative ways to use my leftover meat. Some of my personal favorites include homemade scalloped potatoes with cut-up Cure 81 ham, and Jennie-O turkey pot pie! Delish!
