I love to cook. I love to bake. But one of my absolute favorite things to bake is cookies! It doesn’t hurt that my husband has a firm belief that your kitchen counter is not complete without a plate of homemade cookies on it either. (Hey – it gives me an excuse to do a lot of baking!)

Oatmeal cookies make me happy. They’re comforting. These Oatmeal Applesauce Cookies are almost like eating an apple pie. Warm. Cinnamony. (Yes, I’m making up a word.) =)

Bake up a batch of these delicious cookies today. Happy baking.

 

oatmeal apple cookies

Ingredients

1 stick butter

1/2 cup unsweetened applesauce

2/3 cup sugar

2/3 cup brown sugar

1  t baking soda

1 t cinnamon (I usually add a heaping teaspoon)

2 t vanilla

1/2  t baking powder

1/2  t salt

2 eggs

3 c oats

1 c whole wheat flour OR all purpose flour (I’ve made this recipe both ways!)

To Prepare:

1. Preheat your oven to 350 degrees.

2. Mix together the butter, applesauce, and sugars.

3.Add in vanilla and eggs and mix well.

4. Add dry ingredients. Mix.

5. Drop cookie dough onto cookie sheet. (I always use a cookie scoop for even cookies!) Bake at 350 degrees for approximately 8-10 minutes. Oven cooking times and temps will vary. Keep a close eye! These are best when not overdone – and have that soft and chewy texture.
