When you live in Washington, you’re sort of obligated to love apples. It’s just part of who we are. There are two apple trees in my yard and you can always find a bowl of apples on my kitchen counter. In a few days, we’ll be heading to a few of our favorite local apple farms and loading up with TONS of farm-fresh apples.

One of my FAVORITE things to make is apple crisp. It has all the flavor of apple pie without the hassle of having to make a crust.(And I honestly don’t even like crust!) This is really easy to make, and so good with a scoop of vanilla ice cream or whipped cream on top. I’m not even a little bit embarrassed to admit that I made this twice within the same week. It’s just that good.

oatmeal apple crisp

Ingredients

7 cups peeled & sliced apples (I like to use Golden Delicious or Honey Crisp)

1 cup sugar

1 T flour

1 tsp. cinnamon

pinch of salt

1/4 cup water

1/2 box yellow cake mix (I’ve also used white)recipes (6 of 9)

3/4 c. quick cooking oats

1/3 c. softened butter

1/3 c. brown sugar

1/4 tsp. baking powder

1/4 tsp. baking soda

To Prepare:

1. Begin by peeling and slicing your apples. I like to use a potato peeler to peel my apples. I thinly slice my apples.

2. Place the peeled & sliced apples into a large bowl. Add 1 c. sugar, flour, cinnamon, and salt. Stir to coat. Dump the coated apples into a  2 qt. casserole pan, and pour water on top.

3. In small bowl, combine the cake mix (I just eyeball about half of a standard boxed mix), oats, softened butter, brown sugar, baking powder, and baking soda. Mix together, and sprinkle over the top of the apples.

4. Bake in a 350 degree oven for 45 minutes.
