For Christmas, I received A Year with Six Sisters’ Stuff: 52 Menu Plans, Recipes, and Ideas to Bring Families Together. I am a huge fan of the Six Sisters blog, and love their family-friendly, easy to prepare recipes. I was super eager to dive into this new cookbook and start trying some of the recipes with my own family. This recipe stuck out to me, and I knew I had to put it on my menu plan.
Korean Beef and Rice is one of those awesome “quick and easy” meals you can throw together in under thirty minutes. Typically, when I’m in a time crunch, I use one of my standard go-to’s like tacos or pancakes. But let me tell you, Korean Beef is every bit as easy to get on the table as pancakes. As a bonus, it was delicious! While two of my children resisted trying something new, another one gobbled it up, and the other told me, “It’s not my favorite, but it is pretty good.” I will take it!
I loved the slightly sweet flavor. I think you could easily add stir-fried veggies to this dish as well. This is a great option for nights when you need to get a quick meal on the table. Enjoy!
Ingredients:
1 lb. ground beef
1-2 cloves garlic (minced) *I used my garlic press.
1/2 cup brown sugar
1/4 cup soy sauce
1/4 tsp. ground ginger
6 cups water or stock (I always cook my rice in stock for more flavor.)
3 cups rice
*You can easily adjust the rice to your family’s needs. The general recommendation is a half-cup of dry rice for each person.
To Prepare:
1. Bring your water or stock to a boil. Once the water has boiled, add the rice. Cover, and reduce the heat to a gentle simmer.
2. While your rice is cooking, add the hamburger and garlic to a skillet, and cook until meat is browned. Drain fat.
3. Add the brown sugar, soy sauce, and ginger to the beef. Stir. Allow to cook for several minutes to let the flavors develop.
4. Serve the beef over the cooked rice.
