Welcome back to Meal Plan Monday! We had a pretty tasty week at our house! I hope you did too. Hopefully today’s ideas will help spark an idea or two or get you out of your dinner rut. Here we go!
Sunday:
Waffles
OUT
*Sundays are exhausting at our house. Typically, if we’re going to go out to eat or grab something like a pizza, it’s going to happen on Sunday night. It doesn’t happen very often, as I plan for 21 dinners, but once in awhile, I just don’t feel like cooking. I’m human. It happens.
Monday:
English Muffins and Fruit
BLT Chicken Wraps, Steak Fries
*I picked up some English muffins a few months ago and my kids thought they were the greatest things ever. They rarely want toast, but thought English muffins were a whole new thing. =) It’s easy, so I’m sold!
Chicken Wraps are one of my favorite EASY dinners! You can either grill your own chicken tenders, or purchase pre-made grilled or breaded tenders/strips. Cook up a few slices of bacon, slice your veggies, and wrap it all up in a tortilla. I sprinkle some cheese on mine, while my husband adds Ranch. Super easy.
Tuesday:
Good Morning Banana Breakfast Splits
Slow Cooker Chicken Stroganoff, biscuits, apple slices
*Breakfast Banana Splits are another favorite. (I think it’s the dollop of whipped cream on top of the fruit and yogurt.) These are so easy to customize and a great little boost of protein and produce in the morning.
This was a DEFINITE make-again! We all loved it, and it was so easy to prepare. You have to try this one!
Wednesday:
Triple Chocolate Pudding Muffins
Waffles, Bacon, Potato Sticks, Homemade Applesauce
*The muffins were great and easy enough to throw together at 6:15 in the morning. =)
We LOVE having breakfast for dinner! My good friend Becky bought us a fancy waffle iron a few months ago, and we just love using it as often as we can. Tonight I tried the “cooking bacon in water” trick I saw on social media – and it worked! I do not cook bacon well, and this bacon was perfect! I had never seen Potato Sticks before, but they were almost like mini-hashbrown patties. I found them at Grocery Outlet – one of my favorite places to “auxiliary shop.” I go there once every 4-6 weeks to grab a few things that are always cheaper, and/or to find things that aren’t found elsewhere.
Thursday:
Cereal
Jambalaya, Corn Bread, Jello Salad
*I need to put up my Jambalaya recipe! It is a “cheater’s” version for sure, but a family favorite, and something we make often. My version uses smoked sausage and chicken, and cooks up in less than 30 minutes.
Friday:
Pancakes
Grilled Burgers, Fries, Cookie Salad
Yellow Cake with Chocolate Frosting (my personal favorite!)
*Family night! Who says you can’t grill in January? Our kids played in the drizzle while my husband fired up the grill. We spent so much time outside tonight, that we didn’t have time for a movie. We watched an episode of AFV on the DVR, and took our time at dinner.
I was planning to make a Raspberry Fluff Pie for dessert, but my four year old has decided that graham crackers are all the rage right now, so I was out of graham crackers. No graham crackers = no pie crust. I just made a boxed yellow cake mix (I tend to prefer boxed cake mixes anyhow) and it was tasty!
Saturday:
Cereal
Old Fashioned Mac n’ Cheese, Apricot Chicken , I swear a made a veggie but can’t remember what!
*Can you say YUM?! I got both of these recipes from the cookbook, 365 Quick, Easy, and Inexpensive Dinner Menus by Penny E Stone. I picked it up at Goodwill for about 3 bucks, and just love it. While I don’t typically buy cookbooks without pictures, I loved the simplicity of these recipes, and loved that they were all things my non-foodie family would eat!
I will post the mac and cheese recipe soon. I have been on the lookout for a great homemade mac and cheese recipe. I think with a few tweaks, this one could be a contender!
Apricot Chicken is similar to Cranberry Chicken (a family favorite!) The sauce is made of French dressing and apricot preserves. SO so easy!
