When I’m having a crazy day and the kids are restless, sometimes I just need to stop and bake! Baking calms me down, gets me and the kids together in the kitchen, and produces some pretty delicious results. I stumbled upon this recipe a few weeks ago and was totally intrigued. While I’ve never had a Fluffernutter sandwich, I love the combination of peanut butter and marshmallow. Two of my favorite things for sure!

Also appealing? EASY recipes! And ladies, it doesn’t get much easier than recipes featuring three ingredients! These are a great option if you’re out of flour and low on baking staples, but still want cookies! Try them – you’ll love them! Enjoy!

Are you ready to make some crazy-easy and delicious cookies? Here we go!

Ingredients

1 cup SKIPPY® peanut butter (original recipe calls for creamy, but we used Skippy Naturals Extra Crunchy, and it was delicious!)

1 jar marshmallow cream

1 egg

To Prepare: 

1. Mix together the peanut butter and egg.

2. Mix in the marshmallow cream. My kids were “helping” and we over-mixed just a bit. Ideally, you want a tasty marshmallow swirl. (It’s a little harder to taste the marshmallow if you mix it all the way in.)

3. Scoop onto a cookie sheet and bake for about 10 minutes. Cool on a wire rack and enjoy.

The original recipe said this makes 18 cookies. There is no way I could have gotten 18 cookies out of this. Using my cookie scoop, I made 10 cookies, making this a great “after school snack” recipe. (Which is precisely what I did with these cookies!)
