It’s Monday, and that means it’s time for another installment of Meal Plan Monday! We enjoyed some simple but tasty meals last week at our house. I hope today’s ideas will give you a meal or two for your own planning. Have a great week. Happy planning!

Sunday:
Waffles
Nachos
*We didn’t have any big Super Bowl plans, but I figured I had to make some type of “game food” for dinner. Nachos were a big hit. While we didn’t get to see the Seahawks win, I had a lot of fun live-tweeting the event. Not following me on Twitter yet? Come find me @chasingsupermom!
Monday:
Honey BBQ Meatloaf, Mashed Potatoes, Rolls
*I didn’t have any eggs, so this came out more like “Honey BBQ Hash,” but was DELICIOUS! I can’t wait to try again when I have eggs to bind it together.
Angel Pie Breakfast Cake is one of those recipes everyone should know. It’s perfect for a brunch or mom’s group. How can you go wrong with a 2 ingredient cake?! Lots of flavor possibilities too!
Tuesday:
Oatmeal
Creamy Chicken Enchiladas, Beans, Jell-O
*I will get around to getting my enchilada recipe up one of these days. It is a family favorite for sure! As a side-note, we tried peach Jell-O tonight and it was GROSS! 5/6 of us did not go back for a second bite.
Wednesday:
Sloppy Joes, Tater Tots, Oranges
*I don’t love sloppy joes, but everyone else in the family really likes them. Don’t be afraid to put an easy side dish like simple orange slices on your menu. I love to use raw fruits and veggies in my planning.
My kids and I spent the afternoon at our local science museum, so it worked out perfectly to have an easy-to-throw-together meal on the menu plan tonight.
Thursday:
Cereal
Breakfast Casserole, Nutella Banana Bread
*We like having breakfast for dinner. I plan a “brinner” just about every three weeks. This was a fun variation and a nice change from doing pancakes or waffles.
Friday:
Waffles
Homemade Pizza
Brownie Sundaes
*Fridays are family night at our house, and my aim is always a crowd-pleasing kind of meal. After a walk around the neighborhood, we watched Milo and Otis, listened to Jefferson Airplane and Bob Dylan, and enjoyed some tasty (but easy!) brownie sundaes.
Saturday:
Pancakes
Date Night
*My husband and I enjoyed a rare bit of time away today. We went wine tasting with another couple and ate at a little Italian cafe downtown. When you’re meal planning, remember to plan for things like date nights. (For example, I only planned 20 dinners instead of 21 during this cycle as I knew we would be gone.)
