I’m not even going to lie – we ate GOOD food this week! Not to toot my own horn or anything, but this week’s menu was just a step-up from our normal weeknight meals. (So, “Rit dit dit di do!” (said in my very best Andy Bernard voice btw.)

It’s fun to step outside the casserole box once in awhile (even though I LOVE a good casserole) and just make something a bit different. We had a week full of winners, so I hope one or two things sound good to you! Happy planning everyone.

 

Sunday: 

Cereal

Baked Parmesan Chicken, Creamy Baked Peas

*I was hesitant to make the baked peas. These were basically like the green bean casserole you enjoy at Thanksgiving, but with frozen peas instead. I loved it! Totally fun way to serve up peas. (Yep, I’m declaring that serving peas can be fun. I’m ok with that.)

 

Monday: 

Bisquick Coffee Cake

Spaghetti, Bread, Green Beans

*Bisquick Coffee Cake is just a recipe every mom needs in her back pocket. It’s so quick to put together and a good “cheater’s version” of regular coffee cake.

I was planning on doing a baked spaghetti tonight, but decided to go with traditional spaghetti at the last minute. Little changes to the plan are totally okay!

Tuesday:

Pancakes

Roast Chicken, Carrot Fries, Ranch Potatoes

*I love making roast chicken! It’s so easy! I like to stuff my chicken with an apple and veggies, as it makes the pan drippings (which I throw into my stock that I make every time I make roast chicken) taste amazing!

 

Wednesday:

Waffles

Grandma’s Swiss Steak, Mashed Potatoes, Rhodes Bread

*My grandma makes the most amazing swiss steak. It’s a family favorite and something we all hope is on the potluck table at the holidays. And for me, it’s just not right to serve swiss steak without mashed potatoes. So so good!

If you’ve never bought the Rhodes frozen bread dough – go get it! I like making homemade bread as much as the next baker, but this is SO easy, delicious, and pretty cheap!

Thursday: 

Donuts

Crockpot BBQ Chicken Sandwiches, Homemade Mac n’ Cheese, Lemon Bar Jell-O

Loaded M&M Cookie Bars

*I did my 3 week grocery shop on Wednesday, and I always grab a dozen donuts when I do. Such a fun treat.

I am still working on perfecting my homemade mac n’ cheese, but this one was pretty good. I used a mix of Monterey Jack, white American, and an Italian blend.

I will be blogging the Lemon Bar Jell-O soon! My natural light is terrible at dinner time!! (Oh the perils of a part-time food blogger.)

 

 

Friday: 

Cereal

Pancakes, Eggs, Bacon

*Family night! We had a blast today. I was SO glad I planned an easy-peasy meal, as we are enjoying some unseasonably WARM weather out here. We packed up the kids and headed to the park. We skipped rocks in the river, went on an old-school merry-go-round, and loved the sun. We watched Mr. Peabody and Sherman (and loved it!)

Bekki’s No-Bake Chocolate Cheesecake Parfaits

*Happy Valentine’s Day!! I love this holiday. It’s so much fun for me to make the smallest holidays special for the family. We hung up retro decorations, a string of lighted conversation  hearts, and spent some good time together.

I served up some adorable heart shaped food today, and my husband’s very favorite dessert. I’ve made him this cheesecake every Valentine’s Day we’ve been together.
