Last week was just a little bit crazy for my family. We had SO much going on. During stressful and/or out of the ordinary weeks, I am so thankful for meal planning! I did however, plan ahead when I set out to make my meal plan, and took our schedule into account.It’s not necessarily our traditional menu, but it worked, and were able to eat every night without stress!
Sunday:
Waffles
Frozen Pizza
*I was away in Atlanta at EDexpo, and knew my husband would be tired after a morning of preaching. (He’s the pastor of our church, and Sundays are tiring for him!) I went ahead and grabbed a couple of frozen pizzas for him and the kids to enjoy. We rarely purchase these as making homemade pizza is so easy, but these are a fun treat.
Monday:
Cereal
Cheesy Broccoli Noodles, Biscuits, Apple slices

Birthday Pancakes
Chuck E. Cheese
Tie-Dye Cake, Ice Cream
*My youngest child turned 3 today! We have a tradition in our house that the birthday kid gets pancakes in the shape of their age. This is a tradition my mom started wit me, and that my kids have just loved. We also let each of our kids choose a “special activity” on their birthday. Our little miss selected Chuck E. Cheese. We played games, earned tickets, and had pizza. We also celebrated with a Tie-Dye Cake (thanks Duff Goldman for the awesome mix!) and ice cream.
Wednesday:
Cinnamon Toast Crunch Muffins
Chicken Noodle Casserole, Honey Wheat Dinner Rolls
*I love looking for fun muffin mixes. They are such an easy and tasty way for the kids to start their day. I usually cut up some fruit to go with them as well. Tonight’s dinner was simple to throw together and pretty tasty. I love comfort food casseroles, and this fit the bill. I am a bit of an addict when it comes to trying new bread and roll recipes, and tonight’s was easy and delicious. (And I love this particular blogger’s website! So many good recipes!!)
Thursday:
Oatmeal
“Taco Bell” Crunch Wraps
*I needed to be out the door early tonight to catch a screening of Cinderella, so I needed an EASY dinner. I made a homemade version of a Taco Bell Crunch Wrap. I started by laying out a large flour tortilla. I topped that with just a bit of refried beans, followed by a small tostada. I topped that with nacho cheese, ground turkey, a bit of grated cheese, and veggies/sauces of your choice. Then I wrapped it all up. Super good, easy to customize, and a perfect “quick fix” meal.
*This was even quicker because I often pre-cook my ground meat. I had purchased a 3 lb. roll of ground turkey. I cooked it all up at once, and froze it in meal-sized portions.
Friday:
Cinnamon Twist Crescents
Brownies
*Cinnamon Twist Crescents are the ultimate cheater’s breakfast treat. Unroll a package of crescent rolls or pizza dough. Sprinkle with cinnamon and brown sugar. Cut and twist.
Teriyaki Noodle Bowls are a big favorite at our house. These are so easy to customize with whatever veggies you have on hand too!
Tonight was “Family Night” and we enjoyed watching Big Hero 6 together! If you’ve never seen this one, ORDER IT!!! We all agree that this is one of our very favorite Disney films to date!! Buy Big Hero 6 today! (aff link!)
Saturday:
Chocolate Chip Pancakes
Cheesy Broccoli Rice Casserole with Chicken, Garlic Bread, Homemade Applesauce
*Again, if you haven’t noticed, I’m a HUGE fan of comforting, easy casseroles. This has so many of our favorite things. We are so lucky that our kids love broccoli. This casserole is tasty and feeds a crowd! Post coming soon!
