We ate pretty well this week – even in the midst of all of life’s “busyness!” I know that if I didn’t have a menu plan in place, we would be eating from my limited selection of “dinner rut” ideas. While I love pancakes, spaghetti, and tacos – it’s nice to add a few more things to our rotation!

Sunday:

Church Potluck
*Ahh the church potluck. A veritable smorgasbord of casseroles, soups, and desserts. Pretty blessed to attend where I do.
Monday:
Waffles, Eggs, Sausage
*We love having breakfast for dinner! My friend Becky got us a Belgian Waffle Maker (aff link) last year and we just LOVE it! And what’s better than a strawberry waffle?!
Tuesday:
Teddy Bear Toast
“Olive Garden” Fettuccini with Chicken, Bread, Veggie
*The fettuccini is one of my most popular posts, and is SO delicious! I can’t make it very often because it’s not the best for you, but it’s oh so good. Totally cheat-worthy!
Wednesday:
*This day was a total cheat day. I had a breakfast planned that needed to be started the night before and completely forgot! Then, we got busy doing house projects and packing and what I had planned for dinner sounded gross. So I totally broke protocol, made the kids mac and cheese, and my husband went and got us Taco Bell later that night!
I wanted you guys to see that even the most dedicated menu planner takes a day off once in awhile! Life happens. If you stay on track most of the time, you’re still going to make it!
Thursday:
Waffles
BLT Grilled Cheese, Fries, Butterscotch Apples
*BLT grilled cheese sandwiches are AWESOME! Whoever thought of adding bacon to a grilled cheese deserves an award. This was a simple and affordable dinner too! Doesn’t get much easier than making grilled cheese!
Friday:
Cereal
Fish Tacos, Rice
Brownies
*Family night!! We watched Earth to Echo and tried our first ever fish tacos. I made a seasoned cornmeal crust for our tilapia and cut up some fresh veggies. 3 out of 4 kids gobbled them up! (That’s pretty much a big win at our house!) I also made some to-die-for brownies that I’ll be posting this week!
Saturday:
Toast and Fruit
“Grown-Up” Homemade Spaghettios with Chicken Pesto Meatballs, Homemade Wheat Bread
*This was pretty good! I haven’t decided if I’ll post this yet or not, but all of the kids ate their dinner without complaint, and it was fun to elevate a pantry dish and make it with fresh ingredients! (Plus, I got to use my Dutch Oven, which is one of my favorite things in the world!)
