I thought my life was crazy-busy BEFORE we put our house on the market! Eek! This last week was NUTS. There was the last-minute rush to do all those little projects we’d been putting off to get the house in tip-top shape. Then, once our house listed, the showings started coming in, and we had to attempt to keep the house perfect at all times, despite having four kids who want to play! Add in our daughter’s 9th birthday, a few meetings, our 3 week grocery shopping trip, and some writing deadlines, and it made for a crazy week. Once again, I am SO grateful for meal planning!
We tried a couple of new dishes this week. I won’t lie – I tend to be fairly non-adventurous in the kitchen. Sure, I’ll make a new casserole or pasta dish – but when it comes to truly NEW foods, spices, sauces, etc. – I can be a bit of a wuss. It’s good to try new things once in awhile – you never know what you might end up liking!
Sunday:
Waffles
Skyline Chili
*I’ve talked about Skyline Chili before, but it’s one of our go-to meals. It’s pasta topped with no-bean chili, cheese, and veggies. We love it!
Monday:
Oatmeal
Chicken Noodle Tortellini Soup, Bread
*My family is not a big “soup” family, so I don’t make it very often, but when I do – boy is it good! I had made a roast chicken the day before (and cubed up the meat for later!), and used the bones to create a delicious broth. I added carrots and celery, much of the dark meat, and used cheese tortellini instead of noodles. It was a really fun way to change up traditional chicken noodle soup
Tuesday:
French Toast
Chicken with Mustard Cream Sauce, Orzo Pilaf
*This was one of our new recipes. It was a bit too strong for us, and I ended up mellowing out the sauce with some extra cream. Orzo is one of my all-time favorite things! If you’ve never tried it, it’s basically pasta that looks like rice! SO good – especially with some sautéed veggies and fresh parmesan!
Wednesday:
Cereal
Lasagna Roll-ups, Salad
*This is what was on my menu plan. I know we didn’t have this. For the life of me, I cannot remember what we actually had!!! (I told ya – this week was CRAZY!!!) This was the day I needed to grocery shop, and I know I changed my mind and made something faster so we could head out the door right after dinner. Like I’ve said before, life happens! Roll with it, don’t beat yourself up, and then get back on schedule!
Thursday:
Donuts
Turkey Egg Rolls, Rice, Sparkling Jello
*We LOVED these egg rolls! I’ve made SW Chicken Egg Rolls in the past, but I’d never made a more traditional egg roll before. I was so amazed that all of our kids really loved this meal! We will definitely be making this again!
Friday:
Cereal
Popeyes
*The kids and I needed to pick my husband up from work, so we ended up eating out and then heading to Ikea (one of my favorite places to browse!)
Saturday:
Pancakes
BBQ Chicken, Cheesy Noodles, Broccoli, Breadsticks
Oreo Cheesecake Cake (recipe posting this week!)
*We have a tradition in our house where the birthday kid gets a pancake in the shape of whatever number they are turning. My daughter had a big “9” pancake.
Hannah got to choose our dinner. =)
