Do any of you have a child that is really “by the book?” My oldest child sees things in “black and white” and doesn’t like when things happen out of the blue or off schedule. I’m the same way, so I totally understand where she’s coming from.

At the same time, when you have four kids and two busy parents, not everything is always going to go as planned. Life happens. Bad days come. Celebrations happen. People sleep in. We get sick. It’s just the way it is. Towards that end, and knowing that with a move coming up within the next month for our family, I made the choice to NOT plan breakfast for this meal plan cycle and see how it goes.

There were too many  mornings where I’d have some type of baked good on the menu and honestly, just not feel like making first thing in the morning – so, we are seeing how unplanned breakfasts go – at least until our life settles down again. (If that ever happens…)

Okay, here is our week of dinners! (And I completely forgot to take pictures of our food this time…it’s just been that kind of a week!)

Sunday:

Chicken Strip Wraps, Fries

*One of our quick “go-to” meals! I cook up some chicken strips and throw them in tortillas with a little bit of lettuce, tomato, and cheese. Easy and quick! I often make bacon to go in these too.

 

Monday: 

Simply Great Chicken, Rice Pilaf, Roasted Cabbage

*I almost exclusively use boneless skinless chicken breasts – so that is what I used for the above recipe. The chicken was tasty and everyone enjoyed it. I personally LOVED the roasted cabbage, but only had one other taker on that one. =(

 

Tuesday: 

Nachos

*Nachos is one of my all-time favorite foods. They’re so yummy. I used a queso sauce, ground turkey, and fresh veggies for these. I also love nachos, because it’s one of those dinners where you don’t really have to make a side dish!

 

Wednesday: 

Creamy Chicken Enchilada Pasta

*We had a late showing on Wednesday, and I needed to throw dinner together quickly. I had another chicken pasta planned, and this was an easier substitution. I took all of the components from my chicken enchiladas and made a great pasta sauce out of it. I mixed sour cream, cream of chicken soup, canned chilis, salsa, chicken, and cheese, and poured that on top of cooked rotini. Easy and delicious!

 

Thursday: 

Calzones, Berry Cheesecake Yogurt

Ben & Jerry’s

*I used Rhodes frozen bread dough as the base of my calzones. I simply took out a loaf in the morning, and let it thaw on the counter. At dinner time, I rolled out the dough, and spread one half with pizza toppings. I folded it over, crimped the edges shut, and baked. It was delicious!

We got Ben & Jerry’s to both celebrate the sale of our home and mourn the leaving of it. I have looked ALL OVER for The Tonight Dough, but we couldn’t find it. =( I had Cherry Garcia instead.

 

Friday: 

Bisquick Chicken Tenders, Mashed Potatoes, Fruit Salad

*We really liked these chicken tenders! I usually make my breading using breadcrumbs and parmesan cheese, but really liked the texture of these that came from using the Bisquick!

 

Saturday: 

Sausage and Pepper Fettuccine, Garlic Bread

*I meant to blog this recipe, but alas, forgot to take pictures! I sautéed celery and bell peppers in olive oil and butter. Then I added a turkey sausage. I emptied those into a dish, and in the same pan made my favorite cream sauce. I added the peppers and sausage back in, and topped fettuccine noodles. So good!
