Lately I’ve noticed a few of my IRL friends posting about meal ideas they’ve gotten from my Meal Plan Monday posts – and that makes my heart happy. I love recipes, love to cook, and love getting to connect with other parents. If you’ve made something inspired by one of these posts, let me know! I love comments!
My life is in a crazy tail-spin right now. We sold our house and are getting ready for a move. It was also spring break, and we had a joint birthday party for our two oldest kids. I changed a few nights around on the meal plan, but stuck to what I had planned for the most part.
Like I mentioned last week, I am foregoing planning our breakfasts for a time, just to see how it works out. So far, so good – with the exception that we’ve run out of cereal a week before our next shopping trip.
Sunday: Easter Dinner
*We had crockpot ham (that I seriously overcooked!), cheesy potatoes, roasted vegetables, Texas Roadhouse Rolls, and bunny cake.

I haven’t uploaded my pictures of my kids in their Easter gear yet, but wanted to include a picture of our Easter fun. This is my youngest at our church egg hunt.
Monday: Cheeseburger Macaroni
*I could NOT believe it. I found a recipe for this online and it sounded delish. Creamy macaroni and cheese mixed with spiced hamburger…how could you go wrong? NONE of us liked it. (Because we didn’t like the recipe, I won’t link to it!) I will try again, but with a different combination of cheeses and fewer spices.
Tuesday: Turkey Tenderloins, Corn, Biscuits
*Jennie-O makes turkey tenderloins that make getting that “Thanksgiving feeling” year-round a snap! I just seasoned these up with salt, pepper, and poultry seasoning, and dotted with butter. Easy peasy.
Wednesday: Chicken Verde Tacos
*I will be posting this recipe VERY soon! I love using my crockpot, and this is one of the easiest (and tastiest!) recipes out there! I served up my tasty crockpot chicken inside tortillas and topped with plenty of cheese and fresh veggies. I served rice on the side.

Thursday: Pizza
*When life is busy, you can never go wrong with pizza.
Friday: Soup Can Spaghetti, Garlic Bread, Mixed Veggies
*This meal always brings me back to my childhood. It’s the easiest of sauces, and one of my favorites. Mix a can of Golden Mushroom, a can of Tomato Soup, and one packet of spaghetti seasoning mix – and voila! Nostalgic and delicious sauce.
Saturday: Breakfast for Dinner
*I was ridiculous, and had planned to make chicken pot pie the evening after a birthday party. What was I thinking?! I knew that wasn’t going to happen, so I threw together breakfast. Pancakes and eggs is definitely one of my “go-to” meals when we are in a time-crunch! Do you have a “go-to” meal?
