When life gets crazy (and let’s be honest – there’s usually a degree of craziness for ALL mothers!), we need EASY and delicious recipes in our culinary back pocket. This meal couldn’t be any easier AND it’s a crowd-pleaser.

I talk sometimes about Supermom “Trifecta” meals – meals that are easy to prepare, budget-friendly, and kid-friendly. This Salsa Verde Chicken definitely fits the bill!

When I say easy – I mean it! This has TWO ingredients people…TWO. Now, when you’re going to make a dish with just two ingredients, you need to make sure you are using quality ingredients.

This recipe features one of my favorite sauces – that I’ve found to be so versatile: Herdez Salsa Verde. Supermoms, I am in love with this stuff.  It is so flavorful with just the right amount of spice. The next time you’re at the store – grab a few bottles of this incredible salsa (that’s so much more than a salsa!)

Okay, ready for the world’s easiest recipe? Here we go!

Ingredients:

Boneless skinless chicken breasts (You can use fresh or frozen. Frozen will increase your cook time just a bit.)

1 bottle Herdez® Salsa Verde

 

To Prepare:

1. Place your chicken in the bottom of your crockpot.

2. Pour the entire bottle of Herdez Salsa Verde on top of the chicken.

3. Cook on high heat for approximately 3 hours, or until chicken is cooked through. If using frozen chicken breasts, increase your cook time by at least an hour.

You can enjoy your chicken as is, over rice, on top of nachos, or as taco meat.

I served mine up in tortillas and topped with beans, fresh bell peppers, and tomatoes. So delicious!
