We FINALLY had a break from our summer heat wave. It has been unusually hot here in the Pacific NW, which means my love of baking has had to be put on hold. In the fall and winter, there is always a baked good of some type on our counter. I’ve missed baking for my family, so when we had a day with a bit of cloud-cover, my mind was made up – I was baking cookies!

I went into the kitchen, and quickly recognized that I hadn’t been grocery shopping since before our two week road trip – leaving very few ingredients to work with. I quickly checked and found that I had a cake mix, and knew I wanted to make cake mix cookies.

Cake mix cookies are one of my favorites. A ton of food bloggers out there are crazy for pudding cookies. I feel the same way about cake mix cookies. They are SO soft and chewy, so versatile, and require very little from the pantry. They’re amazing.

You’re going to love these soft and chewy chocolate toffee cookies!

Ingredients

1 chocolate cake mix

1/2 cup oil

2 eggs

1/2 cup chocolate chips

1/2 cup Heath toffee bits

To Prepare

1. Preheat oven to 350 degrees.

2. Mix together the cake mix, oil, and eggs. Stir in the chocolate chips and toffee bits.

3. Scoop onto cookie sheet and bake for approximately 9-10 minutes. Do not overbake! I like to pull the cookies out when they are still a bit soft in the center, and allow them to finish baking on the sheet outside of the oven. (Just say no to crunchy cookies!)

*Using a medium sized cookie scoop, I was able to make 14 large cookies.
