If you’ve followed my blog for any length of time, you know that I LOVE to bake – especially cookies. I’ve made dozens and dozens of different cookie recipes over the years, so when I tell you that a cookie recipe is in my Top 5 cookie recipes – take note. These are not only the best peanut butter cookie I’ve ever had (ever!), they are in my top 5 of ANY type of cookie….and that’s saying something!
When my husband saw these cookies, he asked if I’d been to the bakery – they’re just that perfect. Soft, perfectly round, and chock-full of chunks, these peanut butter cookies are extraordinary. Typically, peanut butter cookies are dry and crunchy. These however, are super soft, chewy, and now my mouth is full of saliva…..I think I need to get to the recipe so I can go make some more of these little beauties. =)

Ingredients:
1 1/2 sticks butter (I tend to use margarine when I make cookies)
1/2 cup sugar
1/2 cup brown sugar
2 eggs
1/2 cup creamy peanut butter (I didn’t measure. I just scooped!)
2 teaspoons vanilla
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 small box instant vanilla pudding
To Prepare:
1. Preheat your oven to 350 degrees.
2. Cream together the butter and sugars, and mix until light and fluffy. Scrape the sides of the bowl, and add in the eggs and vanilla. Mix well.
3. Add in the peanut butter, and mix again, making sure to continue to scrape the sides of the bowl.
4. Add in the dry ingredients, and mix again. Add chocolate chunks to taste.
5. Use a
cookie scoop to drop balls of dough onto a baking sheet, and bake for about 10 minutes. Don’t over-bake these cookies! Remember that cookies can continue to bake on the sheet once they are out of the oven. Part of the magic of these cookies is their softness.
I tend to make fairly large cookies, and get about 18 out of this recipe. If you like smaller cookies, you could probably make 2 dozen.

These do look like bakery cookies, they look yummy and perfect. I love peanut butter and chocolate chip cookies. I have never used pudding in cookies before. I will have to try these.
